Creamy Veggie Fondue

This is a fantastic recipe. Lots of flavor in this fondue. The only modification I made was to add just a dash more white wine to thin out the sauce a bit. This was creamy, rich, and full of flavor. I served it with broccolli, french baguette pieces, wheat thins, red pepper slices and baby carrots. It was a hit.

Apple Pie

I love that this recipe uses brown sugar as well as white. Gives it a little something special. The whole family loves this one. Can't wait to serve this one up at Thanksgiving dinner!

Brown Sugar Meatloaf

I really don't like meatloaf, but this was GREAT! I chopped up a large sweet red pepper and some extra onion and mixed it and to add some health to the mix and it was great. I will definitely be doing this one again.

No-Fuss Pumpkin Cake

Marinated Baked Pork Chops

This was a really good recipe, and very easy. Great for busy weeknights. I added sliced red peppers and onions and baked them with the pork. It came out delicious, and I'll be making this one again.

Zucchini and Potato Bake

This was quick, easy and really good. It was a tiny bit bland, but I think that may be because I used the dehydrated minced onion. Next time I'll either use the wet kind or fresh garlic. I added a generous sprinkle of garlic powder and a bit of cayenne pepper for kick and this was really good, especially on the potatoes.

Ali's Amazing Bruschetta

An easy, quick recipe that came out very good. The only change I made was I sprinkled the bread slices with a bit of garlic powder before adding the topping. I think next time I'll follow another reviewer's suggestion and add a bit of balsamic vinegar.

Marinated Greek Chicken Kabobs

I made this with several changes. I used garlic & herb feta instead of sundried tomato feta, cut the lemon juice to 1 tb, and added a dash of basil & garlic salt. I also marinated it overnight and used the thin cut boneless breast filets as they cook faster and you get more flavor on them since they're thinner. They came out fabulous. Soft, juicy, and full of flavor. This one's a keeper.

Cheesy Vegetable Lasagna

This was really good. I rated it 4 stars because it really could have used a hint of tomato somewhere, maybe even chopped or diced and added to the layers. I made a healthier version by using all reduced fat cheeses and it was still really good. If you're vegetarian or a healthy eater you'll love this one.

V-Eight Vegetable Beef Soup

I agree with other reviewers when they say that this makes a great base for the soup, but is bland as is. I added the following ingredients to the base slow cooker version of the recipe, and got a hearty, tasty soup: 1 can of beef broth 1 can of diced tomatoes 1 can of Goya red beans 1 tsp each of basil, oregano, and parsley Salt, pepper and hot sauce to taste I would never have thought to use V8 as a soup base! It's a great idea, and it's very healthy.

It was good, but I think it could have used just a little bit less balsamic. Other than that, it was good. This is a great choice for someone looking to eat lighter or fit more veggies into their diet.

Raspberry Lemon Muffins

I used Greek yogurt in place of regular yogurt and the batter was really, really thick. I had to add some more egg white to be able to stir it. Lesson learned! Anyhow, the lemon flavor combined with the raspberries was really delicious. I'd try it again - this time, with regular style yogurt

Caldo Verde (Portuguese Green Soup)

YUM! Great recipe, tons of flavor. It tastes just like the soup you get at a Portuguese restaurant. The only thing I changed was I used chicken stock instead of water. Delicious.

Meatball Nirvana

I made a couple of changes. I cut both the garlic salt and the salt in half. I also added 1 tb of minced garlic. The meatballs didn't hold together very well. The mix was a bit more watery than other meatballs I've made, I think next time I'd use an egg in place of the milk. As for flavor, I think they were a little more "herb-y" tasting than I'd prefer, and I'd probably go easy on the Italian seasoning next time too. Overall, an ok recipe.
