Libby's® Pumpkin Cranberry Bread

Delicious! This is a very moist and easy to make bread. I also added about 1 cup of chopped walnuts and it went well with the bread.

Cheesy Vegetable Lasagna

This was really good. I rated it 4 stars because it really could have used a hint of tomato somewhere, maybe even chopped or diced and added to the layers. I made a healthier version by using all reduced fat cheeses and it was still really good. If you're vegetarian or a healthy eater you'll love this one.

Angel Hair Pasta With Fresh Tomatoes

It was good, but I think it could have used just a little bit less balsamic. Other than that, it was good. This is a great choice for someone looking to eat lighter or fit more veggies into their diet.

Brown Sugar Meatloaf

I really don't like meatloaf, but this was GREAT! I chopped up a large sweet red pepper and some extra onion and mixed it and to add some health to the mix and it was great. I will definitely be doing this one again.

Marinated Baked Pork Chops

This was a really good recipe, and very easy. Great for busy weeknights. I added sliced red peppers and onions and baked them with the pork. It came out delicious, and I'll be making this one again.

V-Eight Vegetable Beef Soup

I agree with other reviewers when they say that this makes a great base for the soup, but is bland as is. I added the following ingredients to the base slow cooker version of the recipe, and got a hearty, tasty soup: 1 can of beef broth 1 can of diced tomatoes 1 can of Goya red beans 1 tsp each of basil, oregano, and parsley Salt, pepper and hot sauce to taste I would never have thought to use V8 as a soup base! It's a great idea, and it's very healthy.

Zucchini and Potato Bake

This was quick, easy and really good. It was a tiny bit bland, but I think that may be because I used the dehydrated minced onion. Next time I'll either use the wet kind or fresh garlic. I added a generous sprinkle of garlic powder and a bit of cayenne pepper for kick and this was really good, especially on the potatoes.

Creamy Veggie Fondue

This is a fantastic recipe. Lots of flavor in this fondue. The only modification I made was to add just a dash more white wine to thin out the sauce a bit. This was creamy, rich, and full of flavor. I served it with broccolli, french baguette pieces, wheat thins, red pepper slices and baby carrots. It was a hit.

No-Fuss Pumpkin Cake

Marinated Greek Chicken Kabobs

I made this with several changes. I used garlic & herb feta instead of sundried tomato feta, cut the lemon juice to 1 tb, and added a dash of basil & garlic salt. I also marinated it overnight and used the thin cut boneless breast filets as they cook faster and you get more flavor on them since they're thinner. They came out fabulous. Soft, juicy, and full of flavor. This one's a keeper.

Corn and Zucchini Melody

This one was blah. It tasted bland, and was definitely not worth the effort. I think the recipe calls for too much corn. The sweetness of the corn overpowered the bacon and cheese flavors. It would have been much easier to crack open a can of corn!

An easy, quick recipe that came out very good. The only change I made was I sprinkled the bread slices with a bit of garlic powder before adding the topping. I think next time I'll follow another reviewer's suggestion and add a bit of balsamic vinegar.

Hearty Vegetable Lasagna

This is a decent base recipe, but the proportion of the ingredients I felt was way off. A whole package of lasagna was way too much. I used 12 noodles total. I also felt 2 jars of pasta sauce would have totally drowned this lasagna, and I am a huge sauce fan and tend to use more than others. 1 1/4 to 1 1/2 was more like it. It also lacked spice, and I added several spices to the veggies while cooking them (garlic salt, onion powder, onion salt, garlic salt, parsley). I also used different veggies since I hate mushrooms: 1 red pepper, 1 onion, 1 zucchini and 1 package of microwaved frozen chopped spinach. I'm always trying to lighten things up a bit so I used reduced fat (not fat free) cheeses and only used 1 egg and it was really good.
