Pile of Prawns

Delicious! Made it into a meal (as opposed to finger food) by tossing in a couple handfuls of frozen peas at the same time as the prawns, and serving over bow tie pasta. Oh, and only used a 1/2 c butter (plenty) and cut the salt way back...only used about a quarter/half teaspoon.

Simple Cauliflower Soup

Very good, very simple recipe! I also used chicken stock because I didn't have veg. (I think chicken adds more flavour anyway). Had a large head of cauliflower and a big pot to fill, so I doubled the stock and milk. Also used 3 potatoes, and threw in half a small bunch of broccoli I wanted to use up. Blended it smooth with an immersion blender after I added the milk (when it was a bit cooler). My stock just covered all the veggies as they simmered, and when I added the milk and blended, it came out perfectly thick and creamy. Didn't need to thicken with anything. I think the blending is very important, and from the photo on this recipe, it would appear that it was? Wouldn't do it any other way. The liquid/veggie ratio is the trick with getting the right consistency to this soup, since heads of cauliflower come in such varied sizes. Adding more potatoes will always help with thickening as well. Oh, and served it with garlic-parmesan croutons on top. Yummm...my 6yr old had 2 HUGE bowls!

Baked Apricot Chicken

Amazing chicken!! Thought the ingredient mix a little strange but tried it because of the good reviews. So glad I did! Used the recipe mostly as is, only used half the onion soup mix (another reviewer said too oniony with the whole thing) and added a splash of sweet red chili sauce. Sprinkled the chicken lightly with seasoning salt and granulated garlic before pouring the sauce over. Absolutely delicious!! Served with rice, steamed veggies and a green salad. Will most definitely make again and again!

Czech Roast Pork

Very close...as a Slovak cook having grown up with traditional czech/slovak dishes, I was happy to come across this recipe. Like the Czech Cook, I also omit the beer (just use water or it will be bitter), and mustard usually, although cooking pork with mustard is good for tenderizing and adds nice flavor...good for a change. One thing, you CANNOT omit the caraway...it is what makes this dish!! Or the garlic! Also adding other vegetables and different spices will change it completely.

Breakfast Bread Pudding

Great recipe! Made it Christmas morning...didn't have time to leave it overnight so only left it for an hour before baking, turned out fine. Rolled the cream cheese in cinnamon sugar as another reviewer suggested and tossed in a good handful of fresh blueberries. Also added a tsp of vanilla to the egg mixture. Might try eggnog instead of milk next time for a seasonal twist...

Four Bean Salad

Good recipe with a few changes. Cut the sugar way down to a tablespoon with 1/2 cup white vinegar and a splash of balsamic. Used a good olive oil instead of vegetable oil. Couldn't find pimentos, so I subbed in chopped red pepper. Added a teaspoon of dried marjoram. Delicious!

Oatmeal Butterscotch Cookies

Great recipe! Upped the butter to 1 cup based on other reviewers comments. Baked (not cooked) at 375 for 13 minutes on un-greased stoneware pans. Came out perfectly...lightly browned and crisp on the edges, soft and chewy in the middle. A tip for those that found they stuck to the cookie sheet...only allow them to cool for 3-5 min before transferring to cooling racks. That will allow them to firm up slightly without getting stuck. Thanks Jolene! This one's a keeper!

Chicken Noodle Casserole II

Good base recipe. Made some adjustments based on reviews. Sauteed chicken with diced onion, red pepper, and celery, and added a can of mushrooms. Used a can of cream of chicken, and one of cream of mushroom, upped the milk (wanted it really creamy), and added a few more spices... Mrs. Dash, granulated garlic, fresh cracked pepper. Used crushed whole wheat ritz with medium cheddar for the topping, with a bit of melted butter drizzled over top. Yum...great comfort food for a miserable rainy day.

Cheese Drop Biscuits

Best biscuit recipe ever!! Came out perfect...light and fuffy, crispy with melted cheese on the bottom! I did substitute butter as I had no shortening, and would make it the same way again. Might cut down the garlic salt just a bit...

Ham and Broccoli Bake

Great recipe..I would also give it 4.5 stars! Had all the ingredients on hand, and it was quick and easy to put together. My alfredo sauce was 4-cheese alfredo, which I would use again, and I had frozen broccoli/cauliflower mix which was also good. Family loved it.

Holiday Butter Cookies

Great cookies! Perfect butter cookies with just the right mild buttery flavor, especially if using frosting. But they're good alone as well, and not bland at all! This recipe is a keeper. I also switched vanilla for the almond (nut allergies in the family). Doubled the recipe and made cut out hearts for Valentine's Day. They held their shape beautifully. I did have to bake them quite a bit longer though, almost 20 min, in order to get them lightly golden around the bottom edge.

Neat Sloppy Joes

Great recipe, but a little too sweet. Next time will omit the brown sugar altogether. As another reviewer said, the sugar in the ketchup and soup would be enough. It gets better with slow simmering as well...at least 25 min simmering helps blend the flavors and makes the beef so much more tender. I also threw in finely chopped green and red pepper, and sprinkled shredded mozzarella over the hot meat mixture in the buns when serving. Absolutely delicious with yam fries dipped in campfire sauce (as in Red Robin's, 1/2 c mayo mixed with 3 tblsp Bulls Eye barbeque sauce).

Slow Cooker Beef Stroganoff I

Excellent base recipe...tweaked it a bit like other reviewers. Came out the best Stroganoff ever, and my 4 yr old asked if we could have it for dinner every night! Loved the tang of cream cheese in it! My changes...I used blade steak and browned the meat first,frying the onions as well. Added a bit of beef boullion to the water, and sprinkled 1/4 packet of onion soup mix over the meat in the slow cooker. I used cream of mushroom soup and canned mushrooms, and I wouldn't change it! Also tossed in a couple of tablespoons of sour cream with the cream cheese at the end. Served it on whole wheat broad noodles the first night with steamed veggies, and the next night I served it over boiled, slightly mashed baby white potatoes with a salad. Two totally different meals. Absolutely delicious!!

Chicken Chili

Excellent recipe! Modified it slightly as I was looking to use up a roasted chicken from the grocery store and other ingredients on hand. Made the following substitutions...cut onion to about a cup and a half. Didn't use cayenne (ran out) and didn't want too much heat, so I sprinkled in a few pepper flakes. Added chopped red pepper and celery. Didn't have canned chopped tomatoes, so I used a jar of sauce along with the paste. Had only one can of mixed beans (red kidney and mixed white beans), so I tossed that in and added a can of white beans in tomato sauce. Added some fresh chopped parsley before serving. Served with garlic bread. Absolutely delicious, good combination of spices...smelled heavenly simmering on the stove!

Sausage Casserole

Great Recipe! Followed the suggestions of other reviewers and baked the shredded potatoes alone while I prepped the other ingredients. Sauted the onion together with the sausage. Also added salt, pepper and a bit of Mrs. Dash. Baked it in a stoneware casserole dish with a lid, and the egg mixture puffed up and browned beautifully, with potatoes crisping up nicely. Husband and 4 yr old daughter loved it and had seconds...will make again!

Slow Cooker Salisbury Steak

Delicious! Great base recipe... Used pre-made chopped sirloin patties (just cause I had them)...dredged in flour with granulated garlic, pepper and mrs dash. Fried up some chopped onion in the pan after browning the patties (thought the onion soup powder would make it too salty). Didn't have au jus, so substituted a packet of roast gravy with 2 cans of mushroom soup and a can of mushroom pieces. Perfect with mashed potatoes and steamed broccoli on a cold, stormy day!

Bangers and Mash

Absolutely delicious! Followed the advice of another reviewer and added mushrooms to the gravy. Served with steamed veggies and fresh rolls to soak up the gravy. Everyone enjoyed it...will definately make again!

Basic Crepes

Great recipe...have used it many times, adding a bit of vanilla and sugar. I like to use a non-aerosol oil sprayer to lightly mist the pan between crepes...they slide ride out and are perfect every time!

Salsa Chicken Burrito Filling

Good recipe. I made it a bit simpler..4 frozen chicken breasts, 1/2 pkg taco seasoning sprinkled over, 1 cup salsa...crockpot high 4 hrs. Wrapped it in tortillas with some shredded cheese, crushed taco chips and sour cream. Served with a nice green salad. Delicious! Great flavor even without the cumin and chili powder (enough in the taco seasoning I think). Will try the other reviewer's suggestion next time...wrapping the chicken in tortillas and then pouring sauce over and baking with cheese...like the idea of not wasting any of it!

Ham and Chicken Casserole

Great base recipe. Made a couple of adjustments... Used a whole package of egg noodles, and doubled the white sauce ingredients. Skipped the chicken altogether (had lots of ham) Added some Mrs Dash, salt/pepper, paprika, seasoning salt and parsley to the white sauce, and tossed in a couple of handfuls of frozen veggies (peas, carrots, grn beans, corn). Had no celery, so skipped it. Baked it with the cheese on top, with some sprinkled crushed corn flakes. Lovely dinner. Was nice and colorful with the addition of the veggies, and beautifully creamy...will make again! Will probably try it with sauteed onions and celery in next time though.
