Simple Scones

This was fabulous. I made this in my kitchenaid, once using softened butter to see if I could eliminate the grating and I still had fabulous results! Mixed dry ingredients in the bowl, added the softened butter and on low until crumbly, then added the fruit, then wet ingredients. This was delicious with dried cranberries and some orange zest and a squirt of the juice. A nice crumbly scones texture, but not overly dry. I am making them again next weekend for guests!

Macaron (French Macaroon)

Absolutely fabulous! These are my FAVORITE cookies and although I bake (all. the. time.) I have never attempted a macaron until tonight. These were better than the $2 per cookie ones I last had in NYC! I am so, so , SO thrilled to have tried this! I let them rest for one hour as suggested. I baked one sheet on silpat and one on parchment which I also sprayed with bakers joy (to be on the safe side, lol) and the silpat actually took significantly longer - baked more like 15 minutes. The parchment batch came out just fine, no sticking for me! Rose perfectly, perfect texture, delicious! I filled some with an almond buttercream and some with raspberry preserves and some with a layer of both - YUM! Oh, I also added about a half teaspoon of almond bakery emulsion (not sure how extract would impact the meringue) after the whites were whipped, but before adding the almond/sugar mixture. I also ground my own almonds - I keep a separate coffee grinder for nuts, does a great job. Thank you for this awesome recipe!

Sugar Cookie Icing

The ultimate test was using this for a holiday party with 16 children attending and decorating cookies. Needless to say, I needed quite a bit of icing! I found the flavor to be decent. The set up (drying) was rather quick which was great when you had kids who needed to take their cookies home. They had a beautiful shiny sheen, loved it! However, I did have to use much more liquid than the recipe indicated. I did not measure, so as other reviewers suggested, be patient and add liquid one teaspoon at a time (alternate milk/corn syrup to not mess up the ratios) until it hits the right consistency. Good basic cookie icing without egg white!

Butter Snow Flakes

I liked these cookies well enough for a tasty little butter cookie that was a good filler in my holiday cookie platters. Unfortunately, the dough would not cooperate with either of my two cookie presses (manual pampered chef, nor an electric one) so I just used a small scoop, flattened with the bottom of a glass and pretty colored sugars. I did not alter the recipe at all so my rating is based on the recipe as posted, and reading reviews I see many reviewers increased either the cinnamon or orange zest. If I tried these again I would definitely do that.

Vegetarian Tortilla Soup

Absolutely DELICIOUS for both vegetarians and non! When I changed my diet to vegetarian, there were a few things I thought I'd miss and one of them is a chicken tortilla soup from this site. NOT anymore! In fact, this is BETTER than the 'other' soup! Don't skip the avocado - the creamy coolness of it in the hot soup is awesome! I too added black beans and made this with fresh onions. This was also very easy to adapt for the slowcooker - throw it all in and cook on low all day! YUM!

Easy Pumpkin Muffins

The mood suddenly hit me for some pumpkin muffins and I came here for a different recipe - one I have used often with good results, but more labor involved. Then I saw this! I couldn't pass up something so simple. This was SO easy and tasted good! I made 18 regular sized muffins, and put chocolate chips into a third of them for something special for the kids. I made a quick streusel topping for the remaining. The recipe was so simple that I just couldn't help myself and needed to do something more, lol! (2 tbsp softened butter, 3-4 tbsp brown sugar, 1/4 c. each of rolled oats and flour, sprinkling of cinnamon or whatever spices you prefer) If you make pumpkin muffins from scratch often, you might be disappointed if you compare the two - they will not be the same texture, heartiness, etc. But, for something quick, these are good.

Mock Tuna Salad

As a vegetarian, I really miss some of the comfort foods and quick lunches. This REALLY hit the spot! If you are expecting it to have a fishy-taste, it does not. But it does have a slight flavor reminiscent of a tuna salad sandwich (due to the condiments) and great texture. Yummy on warm, toasted bread! You can easily adjust the condiments to your own preference. GREAT recipe!

Grilled Salmon I

This was terrific. I marinated the salmon and then put the fish - marinade and all - into my calphalon grill pan on top of the stove. Cooking it like this, the marinade actually caramelized on the fish. My 11 yo asked for seconds! Now THAT is success! ;o)

Butternut Squash Risotto

This was delicious! I will be making this over and over again. A tip if you are short on time or don't want to spend the time cooking/cuting/mashing a fresh butternut squash: you can substitute a 10 oz. box from the freezer section with the same results. It is alread pureed, just pop it in the microwave to have it at a hot temperature and then add it in two batches (half in the beginning, half toward the end). This was soooo good. Thanks Ms. Chef!

Better Than Sex Cake II

This cake is easy and FABULOUS! I usually buy a bag of Heath Toffee chips (you can find them by the chocolate chips) instead of chopping bars. This is probably the most requested dessert recipe at my family gatherings! I like to call it the "Better than my EX cake!" hehehe

Best Brownies

These are okay, but I certainly wouldn't call them the 'best'. I usually inhale anything chocolate, but to me these are quite mild and not a brownie texture at all. The flavor is decent and it was a quick chocolate fix, but I probably would try another recipe next time.
