Seven Layer Taco Dip

Shredded Beef Enchiladas

Instead of putting the tortillas in oil I dipped them in red enchilada sauce. These were SO delicious. I will definately make these again!

Orange Cake

I changed mine to a orange rum cake. I actually used blood orange juice and orange extract instead of the lemon. I also switched the lemon pudding for vanilla. I added 1/3 cup rum to the cake recipe and then used a rum cake glaze on the bottom of the cake while it was still hot. Once cooled I used the glaze from this recipe on top. OK - this cake was to die for.

Too Much Chocolate Cake

Absolutely the best! I got so many compliments, I used 8 in. round pans and frosted the cake with cream cheese frosting. Perfection!

Famous Coconut-Almond Balls

Very good - but I agree with others before me; it needed more corn syrup. I added extra but I think I could have still added more - almost double. I pushed the almond into the middle of the balls and it turned out beautifully. I will definately make these again - only with the extra corn syrup.

White Velvet Cake II

My friends LOVE this cake. I do think it is a little on the difficult side to make. It is so moist it is hard to get out of the pan, in an attractive way... But the flavor is to die for. I get asked to make this cake over and over.

Beer Cheese Dip II

Good dip - I take it to many parties. I would like to find a way to make it smoother, though. The taste is great and I've passed this recipe on to friend's who have asked for the recipe. It's so easy - and tastes great!

Tres Leches (Milk Cake)

This is the best tres leche cake I've ever tasted. A group of us had a "taste test" of three different recipes at a party and this one won - hands down. This cake was gone at the end of the party - the others were practically whole.

Danish Potato Soup

I have never made ham for my family but now they are having to eat it a lot because ever since I found this recipe I want this soup all the time... This is SO good. (Just add some salt and pepper)

Bread Pudding with Whiskey Sauce III

Very good - everyone at the dinner party I made this for LOVED it. I did, however, need to cut the whiskey in the whiskey sauce down. I am not a "light weight" when it comes to having a drink but the whiskey was a little too over powering. I think it would be best to ad a little at a time until you find the best flavor for you.
