Chipotle Cream Chicken

Yum! 5 stars for a great punch of flavor in a quick and easy recipe. I omitted the onion and green peppers (hub won't eat either and green peppers seemed out of place anyway). I whirled the chipotles in the food processor. Served over rice with a side of black beans - good stuff.

Italian Breaded Pork Chops

I'm giving it 5 stars because it's super easy, quick and flavorful. While the pork chops are in the oven, it give you time to finish whatever else you may be preparing....in my case cauliflower puree & steamed peas.

Onions Baked with Rosemary and Cream

This was a simple recipe and I like all of the flavors individually, but they didn't really come together well for my tastes. It wasn't bad, but I won't make onions again like this. Fun to try though.

Szechwan Shrimp

I guess I had pretty high expectations with all of the rave reviews. I thought this was ok, we ate it, but I won't make it again. The ketchup flavor was too stong only masked by the spice - there just wasn't a lot of complexity. I had fun trying it, but now it's time to move on to some more exciting new recipes.

Spinach and Feta Turkey Burgers

These are quick and delicious. The salty Feta and the earthy spinach just seem to belong in ground turkey. I added some salt, pepper, extra garlic and a pinch of oregano. Yum-a-do.

Whole Wheat Sweet Potato Muffins

I was so tempted to add some all purpose white flour...I thought for sure 100% whole wheat flour would be to heavy and earthy. I was wrong. This turned out wonderfully and you can feel pretty good about their healthy ingredients. I took other's advice and cut down on the sweetener - I used 1/2 cup of Agave syrup and it turned out perfectly sweet. I also substituted milk for the vanilla yogurt and I put a touch of melted light butter into my topping with a bit of water to hold it all together. I let the batter sit for about 45 minutes before I baked them. These are delicious and I'll be making them often.

Pumpkin Crunch Parfaits

This earned 5 stars for it's simplicity. The taste was very good - I made it twice over the Thanksgiving holiday because my mother loved it so much. It was easier than making a crust for a pumpkin pie! I made it the first time without the gingersnap cookies. Instead, I toasted the pecans and topped it with that and some additional pumpkin pie spice. The second time I made it, I followed the directions and folded in the gingersnaps. The gingersnaps got somewhat soggy and I didn't care for the texture. When I make this again, I'd add extra pumpkin and spice and I'd top with the gingersnaps and toasted pecans after the mixture has chilled. Overall, very easy and a nice taste (with the extra pumpkin and spice especially!)

Award Winning Peaches and Cream Pie

Wow. I wanted to try this recipe when a few of the gals were coming over for the evening. I knew serving a non-chocolate dessert to this group might be risky, so I made a very chocolaty cake along with this recipe. My chocolate loving friends were converted! This cake (not a pie in my book) was wonderful. I baked it in a 9 inch springform pan instead of a pie dish and it came out wonderfully. It was easy AND it tasted good - all of the choc-o-holics asked for the recipe. Thanks!

Pan-Fried Asparagus

Even though it's not the healthiest application for asparagus, it tastes so good I had to give it 5 stars! Definitely use at least 1 lb of asparagus for the listed amount of butter and oil. I probably used about 1.5 pounds and I thought it turned out deliciously.

This was ok - it wasn't as rich as I thought it would be. The flavors were all just kind of mediocre, there wasn't much depth or complexity. It served it's purpose of fixing my sweet tooth, but I probably wouldn't make it again.

Whole Grain Banana Muffins

I'm always looking for a healthier version of muffin and this one fit that bill. The flavor was good, and the calorie to size ratio was excellent (no skimpy little muffin here!). I think the one detraction for me was the density of the muffin - with the whole wheat flour and the oat bran the muffins were pretty heavy and dense. I'll definitely make these again and see if I can find a way to make them a bit lighter.

Banana Pancakes I

The flavour was great, but the pancake texture was offputting. I thought it was way too mushy inside - it felt to me like I was eating a way undercooked pancake. I tried cooking longer over lower heat, but still couldn't get the pancake texture that I was looking for. Probably won't make these banana pancakes again, but it was a fun experiment.

Thai Peanut Chicken

I wavered between 3 and 4 stars.....I figured about a 3.5 and then rounded up. The recipe definitely needs more sauce for my taste (but I'm sure I put in more broccoli than the recipe called for). I also thought the sauce was just a bit too vinegary - I'll adjust it next time and maybe even add a bit more spice. Overall, I'd make it again.

This wasn't bad - upon the advice of others, I cut down the cumin. For my personal taste, I'd add more spice (I like the Sambal Oelek groud chili paste for a good kick).

Crustless Spinach Quiche

I've adapted this recipe to be a bit healthier - I use EggBeaters in place of the eggs, use lowfat feta cheese and I put in a bit of chopped lean ham. I bake them in muffin tins and two muffin sized mini quiches are less than 100 calories (2 points if you're a Weight Watcher!). I slightly under cook them so I can pop them in the microwave at work for a nice breakfast.

I served this at a dinner party during the holidays and it was very well received. This is not a sophisticated drink - it's a good, flavorful somewhat sweet spiced wine that can be successfully made with an inexpensive bottle of red wine. I cut down on the sugar and used orange juice in place of the water. It was kind of like a winter-time Sangria. Yum.

Chocolate Mint Cookies I

Another wonderful tasting and super easy recipe from this site! Loved these cookies! I followed the recipe as written with good results. I used a cookie scoop and got just over 5 dozen cookies out of this recipe. Half an Andes mint didn't sound like much, but it worked out well and had the perfect amount of mint flavor. I'd like to try these cookies with some other chocolate flavor...if I could find some thin orange chocolate that would work, I think the flavor combination would be devine. I will be making these cookies again.

I thought these were really tasty. I don't think that they can REPLACE the vegetable on your dinner plate, but they certainly tasted wonderful. Very easy to make. I'll try them again, experimenting with ways to make them a bit healthier.

Chicken Avocado Casserole

This one isn't going to make it into the rotation. I'd say we're fairly adventerous with our tastes, but nothing about this was really all that special. It didn't seem like a "casserole" to me really - we served it with pasta to utilize the sauce. The sauce was decent, but kind of ho-hum. The nuts in the dish didn't really add much other than calories. The avocados - I like them, but they seemed to get lost in the other flavors. I found this to be just very average and I won't make it again.
