Ultra Creamy Mashed Potatoes

Yummy and SO EASY and fast. I didnt peel them and it made this such a fast recipie. The bacon we a great hit too!!

BBQ Oatmeal Meatloaf

This was _okay_. It was super crumbly (maybe I put too much or not enough oatmeal?). It also did not have a knock-out flavor- though the flavor was not bad. Maybe I would use a hot Italian sausage next time.

Curry Pasta Salad

SO GOOD! I did this with whole wheat pasta instead of multi- colored and I doubled everything but the pasta. I quadrupled the curry, mayo and salt. It would also be good with edamame in it.

Coconut Curry Tofu

This was pretty good. It needed a lot of salt to make it taste flavorful. I used baby corn instead of mushrooms and that was perfect! Adding a bit of cornstarch also made the consistency just perfect.

If you want dense, rich, heavenly chocolate- this is it. For half of the pudding mix we used banana creme- and it was really yummy!

Award Winning Peaches and Cream Pie

I used fresh peaches (so I didnt have the Peach sauce to add to the cream cheese) and it was amazing! We loved everything about it. I also only had tapioca pudding mix- I was afraid that that would cause problems- not at all!

Oatmeal Raisin Cookies IV

My boyfriend has NEVER loved anything so much! By far his favorite cookie.. maybe any food in general.. that I have ever made. I didn't have time to soak the raisins- and it was still great!

Mexican Casserole

Delicious- and SO FAST! I followed suggestions of adding lots of onions and garlic while sauteying the chicken. I added a can of green chilies and did not drain the corn. I also added extra cheese. It came out great!

GREAT! I am a boxing coach and I made these for my athletes after one of their morning runs and they loved them. Making them with the wheat flour worked great! Next time I might try adding some almonds...
