Restaurant-Style Taco Meat Seasoning

Pretty good. Homemade seasonings are definately better than buying those package mixes. As far as the corn flour, it's essential for the flavor, but I did feel the overall taste was a little bland. To answer a previous question, corn flour is like masa used in various latino foods. It's not the same as corn starch. It's found in the mexican food isle of the grocery store and sometimes is called corn masa or masa harina.

Carol's Arroz Con Pollo

This was really simple and good. One suggestion I have is to warm up the chicken broth separately and allow the saffron threads to soften so the flavor is better distrubuted. This shouldn't necessarily taste like spanish rice so I don't agree with some reviews adding cumin, but I would add a squeeze of fresh lime and substitute the parsley for cilantro.

Curry Grilled Chicken

I thought this was really good, but it was much like any base to a nice BBQ marinade. To make it more South Asian, I would increase the curry powder to 1 teaspoon, use a couple cloves of fresh garlic any mayble add 1/2 teaspoon tumeric or fresh ginger.

Noodles Alfredo

This was pretty good. I was looking for something fast and easy to make with leftover egg noodles. I used 3 tbps of fresh parsley instead, and the key to having a smooth sauce is to use freshly grated parmesan, not pre-shredded.

Cajun Pork Chops

I have to agree with previous comments. The seasoning is not very flavorful and doesn't really compliment the pork. I would leave out the sage and creole seasoning and add in some red pepper flakes, onion powder and thyme.

Absolutely The Best Shrimp Scampi

This was really good, but not worth going out and buying brandy and white wine (unless it's bottles you keep on hand). I agree with some that the sauce got too absorbed. A little butter would help.

Shredded Beef for Tacos

This is super simple and pretty good. I agree with other comments that it's kinda lacking in the flavor department. I used some simple things like beer, lime and cumin for addditional flavor. The best part of the recipe is it introduced me to Mexican tomato sauce. I'm gonna have to start using that in more recipes - it was great!

Shredded Beef Enchiladas

I do know my Mexican food being from South Texas, and this recipe is definately a keeper. I have to agree with a prior comment that it's okay to tweak a recipe, but to revamp the whole thing? Well, just come up with your own idea make it your way I say. I like the fact that there is no sauce on top of these. Honestly, it doesn't need all the extra layers of flavor. The only thing I changed was I used only a couple of tablespoons of filling (instead of 4) for 6 inch tortillas. Otherwise, it's too much to fold. Also, I only baked them for 20 minutes, and the tortillas came out nicely golden brown and the cheese was perfectly melted on top without being dried out. Thanks for the recipe!

Buffalo Shrimp

These are awesome, and easy! If you love Hooter's, then these are the shrimp for you. Try using Frank's Louisiana Hot Sauce for that perfect zing and water chestnut flour so the sauce doesn't make the coating soggy.

Buffalo Chicken Fingers

I agree, kind of a bland coating, but it is much healthier and easier than "true" fried buffalo wings or tenders. Next time I will try adding Frank's Hot Sauce to the egg mixture and see how that works.

Sassy Chicken Enchilada Dip

This was great! Believe it or not, I actually used refried beans instead of cream cheese. It was excellent. Not as spicy as I thought it would be though, so maybe next time I will up the amount of heat.

I guess I'm just not a big fan of chinese 5 spice. I would cut that in half, and marinate the chicken using the dry spices and some soy sauce before coating it with the flour. Otherwise this was really good and probably would make again.

Mozzarella Chicken

I agree with using thin sliced chicken fillets instead of messing with pounding out regular breasts. I used half the amount of sauce so the bottom of the chicken wouldn't get soggy in the pan. Next time, I might add a little flour to the sauce to thicken it up. But overall, this was really good and worth the effort!

Texas Jambalaya

This made for a super easy and fast dinner. I only had 1 can each of ranch beans and rotel on hand but found it was enough. I also added the juice from the beans in with the other liquids so it could cook off. Just personal taste, I don't like my rice dishes mushy. Thanks
