Dirt Cake I

This was great, though I'd suggest eating it soon after you make it. I made it around 6 pm and by noon the next day, it was pretty soggy. I layered cookies, all whipped mixture and cookies on top - this is full to the top of a regular 9x13 pan. I used light whipped topping, sugar free pudding, and skim milk (reg cream cheese, butter, and oreos). This is plenty rich so next time I'll reduce the butter and try reduced fat oreos.

Chicken Pot Pie IX

Wonderful! I brushed with egge whites - top and bottom (I prebaked the bottom) and both were great. I added boiled potatoes and used extra sauce. Tips: if adding extra ingredients, use a deep dish pie pan; place tin foil or a baking dish under while baking - mine boiled over. I'll definitely make again, maybe without a bottom crust next time to cut down on calories.

Creamy Rice Pudding

Apparently this was good. I'm lactose-intolerant but I made this for my boyfriend and he loved it. I added nutmeg and cinnamon and used minute rice.

Southwestern Egg Rolls

These were very good. Served with Amy's creamy cilantro dip (this site). I used leftover chicken taco meat and sprayed with cooking spray and baked at 425 about 15 min - turned out crunchy. I tried wonton wrappers (for an appetizer version) and 8 inch tortillas. I thought the tortillas were a little thick so next time I'll use egg roll wrappers. Make sure you use enough cheese or the mixture will be too dry. Very good, even the next day.

Dill Pickles

This was my first attempt at pickles. An all day project, but fun. My pickles were mushy when we ate them - could be that my ice bath didn't stay icy? Also, go easy on the garlic or eliminate all together.

Pesto Tuna Salad with Sun-Dried Tomatoes

Buffalo Chicken Dip

I made a few changes - I used blue cheese dressing instead of ranch and topped with blue cheese crumbles. I also used baked and shredded chicken. I thought it was a little too creamy with not enough meat, but everyone loved it. Served in 9x13 dish, layered with cr cheese/dressing, then chicken, then crumbles. Next time I'll use only 1.5 blocks cream cheese and less blue cheese on top. Overall, great base recipe.

Linda's Lasagna

I was nervous - this was my first lasagna. Very easy. Since I don't care for the consistency of ricotta, I really like this recipe that calls for cottage cheese. I cut down on the mozz, though, but all is is terrific!

Mexican Beef Supreme

An instant favorite! My family said it was better than our favorite burrito take out! I use cut up chicken breast instead of beef. Next time I'll try shredded chicken so the meat and sauce blend together.
