Roasted Vegetables

This was a huge success with people of all ages at a large gathering. I tripled the recipe - using red peppers, zucchini, button mushrooms and red onion. I had fresh thyme and rosemary and added crushed garlic as well. Next time I will add portobello mushrooms. I used some of the leftovers for roasted vegetable quesadillas using monterey jack cheese w/ jalapenos. Superb!

Lobster Stew

This is absolutely an authentic recipe. My best friend, her parents and grandparents are all from Maine and make their living from the sea. This is exactly how they make their Lobster Stew. Sometime a few chopped scallions are added. Thanks Marion, for sharing.

Broccoli Chicken Casserole III

This is a great recipe. I'm not a fan of curry powder so the second time I made it I eliminated that ingredient and added 1/2 medium onion, chopped - lightly sauteed with the garlic and added to the noodles. It was a great hit at a recent potluck I attended.
