Date Nut Bread

Delicious Raspberry Oatmeal Cookie Bars

I used homemade strawberry jam that my neighbor gave us. The jam was way too sweet to eat with bread, but was perfect in the cookie bars!

Chicken Satay

Not bad at all! There's a peanuty aftertaste that follows the initial flavor of the curry. I cooked it on my george foreman grill and used a smaller amount of white sugar because we were out of brown. Will make again!

Angel Food Cake III

I love how simple this recipe is! I used splenda for mixing with the flour and regular sugar for mixing with the egg. I also didn't have cake flour so I used all-purpose flour with some cornstarch. Turned out well even though I beat the eggs by hand and didn't use a tube pan!

Salmon with Dill

I didn't measure anything and used lemmon pepper. First I sprinkled salt on both sides of the filet, then covered the top evenly with onion powder, dill, and lemon pepper. It turned out fabulous. The flavors of the seasonings are mild enough to really let the taste of the salmon through. I don't know if the butter did anything for the fish though. This tasted wonderful, but it might be because I was using fresh king salmon from Alaska that a fisherman friend of ours brought back for us.

Chicken Breasts with Balsamic Vinegar and Garlic

I used veggie broth. I scaled the recipe to 1 serving, and I think that's why all my sauce dried up before I was done cooking the chicken! The flavor wasn't bad, but I've had better balsamic chicken.

Cajun Chicken

This was really good. I used a ziploc bag instead of a dish and used only 1/3 of the oil and twice the amount of cajun seasoning. Then I just added in the chicken, closed the bag, and massaged the bag around for a bit so that all the seasonings covered the chicken. I cooked it on my George Foreman grill. I think doubling the cajun gave the chicken the perfect amount of spice!

Best salad I've ever had! I only used about a quarter of the sugar for the dressing. The strawberries were sweet enough without added sugar.

Mrs. Sigg's Peanut Butter Cookies

The best peanut butter cookies I've ever made! The flavor and texture were just perfect. Soft, chewy, and peanut buttery without being too peanuty or too sweet! I used a cup of butter instead of using shortening.

White Chocolate and Cranberry Cookies

The first time I made them I used vanilla extract and they were fantastic. The second time I used brandy and added macadamia nuts and they were AMAZING. The different flavors and textures work so well in these cookies. They're my new favorites!!
