Boy, do I love Girl Scouts. I've been a leader now for two years (involved parent for far longer), and everyone in my cluster can already tell that I'm a lifer! My girls are amazing, and they remind me of how important it is to go at life with all your weight behind you. Not every woman gets the chance to be a super-hero, but I certainly feel like one when I'm with my troop. It was seeing myself through their eyes that gave me the courage to follow my own dreams.
My favorite things to cook
I like to try new things, but my husband doesn't! It can sometimes be difficult to find a balance when meal planning. Lately, I have been trying to cut my family's meat consumption. Achieving this has Health, Economic, and Environmental benefits. My ultimate goal is to completely eliminate red meats, and to reduce our other meat intake to three times per week. I'm still a long way off!
My cooking triumphs
The most amazing thing happened just this month. I "snuck" spinach into three meals in one week! (Italian wedding soup, Chicken flourentine cassarole, and Southwest chicken eggrolls.)

Banana Banana Bread
This bread turned out tasting pretty good, but it didn't rise at all like baked goods usually do.I filled my pan about 2/3 full and that is where it stayed. So i turned out some pretty flat loaves! I'll know for next time to go ahead and fill my pans. I replaced 1/2c. of flour with wheat germ (like I always do), and added some cinnamon and a bit of flax seed.

Amy's Cilantro Cream Sauce
Whirrled the whole thing up in the food processor in a snap. I used fat free cream cheese (even though I don't like the stuff) and the flavor was still amazing. I didn't have celrey salt, so I threw a few leaves of celrey into the food processor with the cilantro. also I accidently left out the sour cream, but didn't miss it. I've made two batches in a week!

Chicken Chimichangas with Green Sauce
These looked Beautiful served over a bed of shredded lettuce. The recipe made 12 ten inch flour tortillas, but not even my husband could eat more than two. My family loved it so much that they are having it two nights in a row with no complaints! 805 calories is a lot though, so here are the changes I made in an attempt to lighten it up: fat free versions of cream cheese, cream of chicken soup, and sour cream. I completely left off the Cheddar. Baked, not fried. And I used the spices from Taco Seasoning 1 instead of packaged. Also, in the sauce I used a small squirt of sriracha chili sauce in place of the jalapeno.
