Smoky Chipotle Hummus

This dip is amazing! I omitted the bell peppers and cumin (personal preference), and doubled the tomatoes and cilantro. Used lime instead of lemon, and oil from the tomatoes instead of plain olive oil. Had to put this in the fridge before I ate too much of it!

Honey-Garlic Glazed Meatballs

We loved this recipe! I used about 2/3 chili sauce to 1/3 ketchup (because I was low on ketchup), and added about 1/4 cup more honey. I served these over homemade "smashed potatoes" (skins on) and steamed, buttered brussel sprouts. My husband says this makes the best meatballs (the meatballs themselves w/o sauce), and said he couldn't wait to have leftovers for dinner tonight. I doubled everything, and only used about 1/3 of the meatballs in the sauce, and froze the rest for future dinners.

Chocolate Zucchini Cake III

I try to hide veggies in many dishes, and this worked perfectly! I couldn't resist telling my 9yo stepson as soon as he swallowed his first bite, and he still almost licked his bowl clean. I did sub 1/2 the oil for applesauce, then cut the sugar down to 1.5 cups, still plenty sweet. I have a wimpy grater so I gave up on it 5 min. in and added chunks of zucchini to the blender with the oil, applesauce and eggs. This one is definitely a keeper!

Slow Cooker Carnitas

This is very, very good. I too tripled the rub ingredients except for the cinnamon with fantastic results. I added a few splashes of liquid smoke before cooking, and crumbled a beef boullion cube into the crock with 2 cups water. Will definitely make this again. I like mine simple, with white onion and cilantro on a corn tortilla and a squeeze of lime. Delicioso!

Spinach Bacon Quiche

I've made this several times. The first time I made it as written, and it was great. Tonight I made a few changes and it was excellent. I added finely chopped deli ham to the onions and sauteed with the spinach to reduce the moisture from the spinach. I put some of the cheese on the bottom and baked the crust for 5 min at 400, kept the crust from getting soggy. I also reduced the milk to 1 cup and added 2 additional eggs. My 9-year-old had 3 pieces! It was perfect, and I will continue making it this way.

Beth's Spicy Oatmeal Raisin Cookies

The perfect chewy oatmeal cookie. I added 1/2 t powd. ginger for extra spiciness and 1/2 c toasted slivered almonds for crunch. Best oatmeal cookies I've ever had.

Apple Crisp II

LOVE this recipe. I've been making it for several years. I sometimes sub peaches for the apples. I've also added a cup of frozen raspberries to the syrup mixture, cooked until they fell apart, then strained through a fine sieve (hate those seeds!) and pour over. You might have to add a little extra sugar to the raspberry syrup, but it is divine! I also double the crust mixture.
