Creamy Rice Pudding

I've made this as directed, but this morning I found 1/2 cup of leftover cooked rice in the fridge and experimented with making rice pudding for one in the microwave. I simply cut the proportions in my head (though using a whole egg worked fine). I used my 4 cup pyrex measuring cup, and cooked the rice, milk, sugar & salt for on high for one minute at a time, stirring after each minute (3-4 minutes total). Then, I stirred some of the hot mixture into the beaten eggs first, to make sure I didn't cook the egg. After adding the egg & raisins back in, I cooked it just another 45 seconds or so, then added vanilla & butter. A nice breakfast & diet friendly : )

Blueberry Cream Cheese Muffins

Pretty amazing! I substituted fresh local strawberries. I almost didn't use whole wheat because it sounded too healthy, but really --- they were GREAT!!! 375 was fine. No rising problems. It made a total of 20 nice sized muffins.

Fried Razor Clams

Lacking saltines, I followed ladybug's recommendation and dipped the clams in flour, then egg wash, then panko mixed with seasonings. At medium-high, they only take a few minutes per side. Yum.

Easy, yummy, healthy. Works well in the crockpot - just brown the hamburger first. As already noted, there is a recipe on allrecipes for "easy garam masala" if you don't have it on hand.

Rhubarb Strawberry Cobbler

This is a very easy recipe - more of a top crust pie than a cobbler, I think. I use generous amounts of the fruits listed, because they cook down some and the crust is ample. I've made it multiple times. Everyone loves it!

The Greatest Grilled Turkey

Out of this World Turkey Brine

I used this for a thanksgiving turkey. It gave the turkey great flavor. I roasted a la Safeway's "2 hour turkey." Unstuffed, the 22 pound bird was done at 475 in 2 hours.....
