I think it's unfair to post a review on a recipe when you did not follow directions or use the ingredients called for.  Substitutions create different recipes and different tastes.  There is a reason for the ingredient called for..example on my Ham Salad, the reason I use freeze dried onions… MORE

Downeast Maine Pumpkin Bread
So, I made this recipe the first time just exactly as written and really thought it delicious. Definetely a 5 star. Looking at the sugar and oil in the bread, I decided to try and experiment to lower the calories. I substituted 4oz of apple sauce for the 1/2 of the of oil and 1 cup of Splenda powder for 1 cup of white sugar and then only added 1 1/2 cups of white sugar. Next time I will substitute 1/2 of the eggs with egg beaters. With all these adjustments, it was still very delicious and I divided it into 3 - 8 x 3 3/4 loaf pans. Wonderful!! and I felt much better knowing I was eating less sugar and oil. OK..I did add about 2 cupc chopped pecans.

Winter Blossom's Often Requested Ham Salad
Hi Folks, I want to thank you for your nice reviews. Glad you enjoy the salad as much as my friends and family do. Just wanted to mention, if there is any left over it is great mixed with a little Italian flavored bread crumbs and stuffed in mushrooms then baked for 1/2 hour at 325 for an appetizer. You might even add some grated Parmesan to the top just before removing from the oven. A friend has made this salad with left over roast pork and it is also very tasty. I grind almost everything left over and give it a try. I had two left over Chicken Cordon Blue's the other day, ground them up and made chicken salad and it was awesome. The combination of the cheese and the ham made it delicious. Thanks again for the reviews. Happy days and happy grinding. :o] Winter Blossom
