Chicken Jalfrezi

I reduced the spices by about 1/3, due to people saying it was too spicy, because I'm a bit of a wimp. It's not necessary at all. Even for a wimp like me I wished I hadn't modified the spice...except for the salt. Definitely reduce the salt. I also added bell pepper and made it with quinoa instead of rice. This was so easy to make and tasted excellent. There was nothing left when dinner was over.

Quinoa and Black Beans

I had no vegetable broth so I made this with water and it was totally fine. It was a huge hit. I put the leftovers in a tortilla with salsa and cheese and they raved about that too. Definitely a keeper.

Black Bean and Salsa Soup

It was so simple and very tasty. I put some onions and green pepper in the food processer and diced them up really small. Then put half in the soup to cook and blended the rest in with the beans and broth before mixing it all together. It would have been fine without the onions and bell pepper but I had them and they were going bad so I just tossed them in. Easy and had some bite with the salsa and cumin.

Ratatouille

This definitely needs more than 45 minutes in the oven. I cooked it for 60 minutes. Some liquid but nothing a slotted spoon couldn't cure. I would add more cheese and maybe some oregano. It was slightly on the bland side but the flavor of the veggies is definitely there. I did not cover it and I made one large layer in a long lasagna dish. Perfect! This is going in the rotation.

Loved this! I also added onions. I didn't have enough balsamic dressing so I substituted an organic Asian sesame dressing. It was to DIE for! This is now in the rotation.

Savory Roasted Root Vegetables

Loved it. I made it with no beets and added celery and a rutabaga. I had no white wine so made it with sherry cooking wine. Delicious and easy. Just chop and mix!

Beef Stew IV

Loved this. I also only cooked the meat for an hour and it was very tender. I could cut the pieces with my spoon. I put all the spices, and then some, people talked about in their reviews...yummy. I sopped up the juice with my bread. My soup was thick enough for me that I didn't need to add flour or corn starch. Definitely will do this again.

Fast and Easy Tofu Lo-Mein

Loved this. 2 tablespoons of olive oil was not enough though. the tofu stuck to the pan almost immediately on medium high. I added another tbsp of olive oil, red pepper flakes, garlic power, and then a little water when I added the frozen veggies. Super easy and tasted great.

Pasta with Vegetables

I had no red wine vinegar so I put the spices in with the vegetables while they cooked and then tossed with plain olive oil. Very easy, very good. I also added mushrooms and asparagus. yummy.

Chicken and Peppers with Balsamic Vinegar

Easy to make and we really liked it. I did marinate the chicken overnight after reading many reviews talking about it being bland. I marinated in sesame oil, balsamic vinegar, and low sodium soy sauce. I also cooked the chicken whole. I will make this again.

Baked Kale Chips

I made this with flowering kale because the grocery store was out of green kale. Very good, easy to make but very fragile so you can't really store it. Make your serving and eat it then. Will definitely make this again.

I took the advice of reduced garlic and I increased the mushrooms because we love them so much. This is definitely not an attractive dish but we loved it. Will make this again for sure!
