Coconut Cake III

Ok everyone...here is the scoop...this is THE BEST CAKE EVER! I made this for my mother-in-law's birthday. She likes chocolate cake so, I used a chocolate cake mix and chocolate pudding. It was absolutely fabulous. So, I decided to try it with the white cake mix~~~~not as great, but still wonderful! My advice? Don't use fat free or light cream cheese, makes the icing way too soft and runny. My brother tasted this today (he doesn't like coconut) and he loved it! Changed his mind about coconut. This is the BEST cake ever! I highly recommend this to everyone!

Green Bean Cheddar Chicken

Very tasty...However, next time (and there will be a next time!) I will add an extra can of soup and some milk so it is creamier. It was quite good tho!

Spam on the Go

This was good! My hubby (not a spam lover) didn't know it was spam until he found the recipe! I chopped up the spam really small and it looked and tasted like sausage. Here are the changes I made: I used half whole wheat and half spinach pasta, added a splash of worchestershire sauce, and a splash of Texas Pete hot sauce. Very yummy! Will make again!

Zucchini Soup II

Can you say amazing?!! This soup is so delicious! I didn't cook the veggies for 20 minutes so they weren't mushy after it was all done. I didn't puree either. My hubby doesn't like soup, but he commented how good this was! That is saying a lot! Next time, I will try with cream of potato soup! Yummy!

Get a Husband Brunswick Stew

Ok, now this is awesome! I had this 3 meals a day until it was gone and it was gone all too quickly! I am going to get another batch going right now. My husband and I both loved this! The changes I made were minimal. The pork, I used pulled pork (already BBQ'd left over from a party) and I used whole kernal corn, as that is what I had on hand. Very tasty! I can't wait to dive into the next batch! I made some frying pan cornbread to go with this. Sensational! Highly recommend to all!!

Corn 'n' Beef Pasta Bake

This was very good! I made this for my inlaws as my MIL had surgery. It smelled so great, I came home and made it for my family too. My changes: I browned the ground beef and onions and peppers together, adding the salt and pepper and chili powder and garlic at this time. Then I added 1 c of half and half with a squirt of lemon juice in place of the butter milk. Then I added the cream cheese. After the cream cheese was melted, I added a 20-ounce can of drained diced italian tomatoes, 1 small chopped zucchini and corn. I cooked 2 c of pasta and threw that in at the end. I didn't bake this, I cooked it til it thickened on the stove top and dug in! It was totally wonderful! My children kept commenting how delicious it was. This is an oddity at my house. Definitely will be making this one again!

Corn Spoon Bread

This was really good! I doubled this for Thanksgiving this year and it didn't set even with cooking it on high for 6-8 hours. I ended up throwing it in the oven for 30-45 minutes too. But it was a smashing hit!

Cranberry Upside-Down Coffee Cake

I have made this several times. It is very good! I have trouble getting this to set in the middle, so I usually flip it onto a glass platter so I can throw it back in the oven to get the top to cook through. I get rave reviews on this cake!

Leftover Turkey Brunswick Stew

This is super! I love Brunswick stew but pulled pork is hard to come by around here. I had leftover turkey from Thanksgiving and came across this recipe. So glad I did!!! I did change a few things...I used fresh potatoes instead of canned. I just made sure I cooked it long enough to ensure they were done. I added about a teaspoon of chili powder and some garlic salt. Next time I will only put about half the vinegar in. This is totally wonderful! I will be enjoying this leftover leftover turkey brunswick stew for many meals!

Balsamic Chicken and Pasta

Super! The chicken was wonderfully flavorful! I marinaded in the fridge overnight. The pasta was wonderful also, but I only added half the balsamic vinegar....after reading the other reviews. It was a big hit!

Banana Sour Cream Bread

This is a great recipe! Be sure to do the sugar/cinnamon dusting of the pans. My hubby loved that! Bread was moist and flavorful. Will definitely make again.

Pizza On The Grill I

What a great recipe! We have made this several times and have perfected it! Before putting on the grill, i place the piece of dough on a greased piece of aluminum foil and roll it out. We then put the dough on the grill, grill one side, bring back inside and put our toppings on the grilled side and grill again! We have this every weekend. The dough is totally awesome! Perfect perfect perfect! 10 stars!!!

I made this exactly as the directions called for except i made it in a 9-inch springform. The only complaint I have is it needed more pretzels. Next time I will def double the pretzel crust. YUMMY

Quick and Easy Mexican Beef Chili

This was really yummy! I did make a few changes...I used 1 can of black beans and 1 can of kidney beans. I also put in 4 T of chili powder and about 2 teaspoons of ground chipotle pepper . I only used 2 C of beef stock. Next time I'll add another pound of beef, or maybe some pulled pork. I topped with shredded cheese, fresh jalapenos and onions. It was sensational! Even my kiddos loved it! Will definitely make again.

Not so good. The cupcake part was ok, just not something that I'd ever make again. The icing had a good taste but was really messy and not really good for transporting. Still searching! :)

Mint Buttercream Frosting With Dark Chocolate Glaze

Sensational! My son requested this for his 9th birthday party. I made chocolate cupcakes with this mint frosting and garnished with Andies mints and chocolate sprinkles. They were a huge hit! Will make this icing again and again!
