Garden Tomato and Basil Soup Recipe - Frito Lay Recipes

This wasn't very good. It came out not very flavorful and the consistency was more like tomato sauce than tomato soup.

Strawberry Chantilly

I got a lot of compliments on this recipe. The recipe is confusing as written because it doesn't indicate whether you're supposed to use the white sugar or the brown sugar at particular points in the recipe. So when I made it, I used white sugar both times and 2/3 a cup both times. I used thawed frozen strawberries and added some of the leftover juice to the strawberry mixture and I suppose this is why my strawberry mixture didn't expand as much as other people's seemed to. I had to add some cream of tartar to help stabilize and give my strawberry mixture some volume. I also used almonds instead of walnuts because I'm not a walnut fan and almonds seemed to go better with it. Next time I make this, I would double the crumb mixture to make a more substantial crust in the bottom of the pan. The crumbs sprinkled over top were nice and crispy despite the lack of baking them.

Arugula Salad with Citrus Vinaigrette

This was too sweet of a salad for me so I can't rate this based on my personal tastes because I'm so picky when it comes to salads but my mom who likes almost any salad said that it lacked pizazz or flavor.

Crispy and Sticky Chicken Thighs with Squashed New Potatoes and Tomatoes

Campbell's® Green Bean Casserole

I've had this a few times and I'm not a big fan. It was way too salty and had kind of an acrid taste that I didn't care for. Also, the flavor of the green beans is kind of eclipsed by all the soup and milk.

Best Brownies

These were really good, very nice texture, halfway between fudge and cake. I think they would have been better without the frosting to tell the truth. Perhaps could have used a little less sugar but that's my personal tastes. Changed: I put some mini marshmallows in the brownie batter. I had to add some milk to the frosting because even with melted butter and melted honey, the frosting was too dry and crumbly.

Strawberry Torte

This was oh so good. I got rave reviews. However, I only made minor changes to the recipe. 1st change is that I only used 1/2 cup of sugar. 2nd change is that I didn't get a lot of strawberry juice so I followed another user's review and cooked down the frozen strawberries and pureed them with sugar. When doing this, I learned that 1 tablespoon of cornstarch is not enough. My strawberry topping was very runny and ran all over the cake. I also couldn't get a very thick layer since that was the case. Next time I make this, I will either use more cornstarch, or perhaps some pectin, or even gelatin to make it nice and thick. I found getting the ladyfingers to stay upright very difficult so I laid the bottom with ladyfingers, and put a dab of the cream cheese mixture in a small bowl and dipped the bottoms of the ladyfingers in the mixture to act like an adhesive. That worked extremely well.

Flounder Florentine

I really liked this. I made a few changes though. First, instead of plain spinach, I used creamed spinach because that was all I had. In addition to the other ingredients, I also added lemon grass and lemon juice, garlic, and chopped green onions to the sauce. It gave it a nice flavor. In addition to sprinkling the fillets with paprika, I also sprinkled with dried spices (oregano, dill, and parsley) and cayenne pepper powder.

Almond-Crusted Tilapia

This was so fast and easy to make. The few differences that I made were I seasoned both the egg and the flour with the lemon pepper and garlic powder (didn't have garlic pepper) and I ground some lemon zest into the butter in the pan. Also, I didn't use fresh Parmesan because I didn't have it. I used the shaker kind and it wouldn't melt but oh well, it was still really good.

Grilled Chicken Adobo

This was incredibly easy and delicious. The only problem that I saw with the recipe is that it doesn't indicate what kind of vinegar to use so I used white vinegar. It worked well. Balsamic vinegar may have been over powering, but I'm not sure, it could have gone nicely with the flavors. I also used low sodium soy sauce. A little bit of the sauce goes a long way! Go easy on it or your rice and chicken will be over powered. I forgot to mention that to one diner, they used a lot of the sauce, and they said it was too salty.

Easy Sugar Cookies

These were great. I cut the recipe in half, make larger cookies and had to cook them for a bit longer. The only changes to the recipe that I made were that I put in twice the amount of vanilla extract and I added some almond extract. I also iced them and dumped a bunch of sprinkles and decorations on them. I used the Sugar Cookie Frosting recipe on this site by Kathy Brandt.

Jewish Apple Cake II

I got a lot of compliments but there are some things that I did different and that I'd do differently next time. First, I'd use apple sauce in place of all the oil. I used half apple sauce and half oil when I made it but think it would have been fine with all apple sauce. I cut out some of the sugar and next time, I would have used some brown sugar instead of white. I used Granny Smith apples and the tart taste of the apples complimented the cake well. Next time I'd add more apples though. I also would have kept the wet ingredients separate from the dry ingredients until the very last minutes to see if it would have helped in lightening up the cake a little. Apparently, not keeping wet and dry separate until the last minute will cause long gluten strands to form which will make the dough tougher or heavier.

Chicken Breasts with Balsamic Vinegar and Garlic

This recipe was to die for! It was so tender, moist and flavorful. So easy to make too. The only things I did different was that I didn't use fresh mushrooms because I didn't have any. Instead, I used some wild forest mushrooms from a jar. I also didn't have thyme so I used a mixture of a few other herbs.

Salsa Chicken

A very simple yet delicious dish. Since I was only cooking for myself, I made one serving. What I did differently was I tried following other members' advice and I put the chicken in a bag with the taco seasoning and shaking it to coat. The coating kept falling off I emptied the seasoning on a plate and pressed the chicken onto it. This worked really well. Then, I cut a large square of aluminum foil and put a shallow layer of medium salsa on the bottom, which I then placed the chicken on. I poured a thicker layer of salsa on top of the chicken and folded the foil around to create a pocket. Then I placed it in a pan incase of spills. I cooked it for 25 minutes and then unfolded the foil and left the top bare to sprinkle cheese on and then I put it back into the oven this way for five minutes. I only had smoked cheddar but it still tasted great. The chicken came out tasty and moist. The taco seasoning you use plays a large role in the taste. I used hot and spicy Old Del Paso. It wasn't too bold.

Tangy Almond Chicken Kabobs

I really liked this recipe but made a few changes. I served this as a main dish so I cut the chicken into large chunks. I marinated the chicken chunks in the fridge for a whole day because I forgot to make it that night. The tangy taste permeated the chunks. Then I skewered them on metal kabobs and I cooked them for 10 minutes on medium on the grill but they came out too dry. I would suggest cooking them for a shorter period of time. My family really liked them and want me to make it again for them.

Slow Cooker Kielbasa Stew

I like sauerkraut but this was a bit too much for me. However, everything else was very good, very tasty. I substituted turkey sausage for the saugage the recipe calls for with good results. I might make it again.
