Tomato Soup

Recipe is a good starter. As is, is bland. I seasoned to taste as follows: added onion & garlic powder; fresh lemon juice & zest (whole lemon), 1/4C red & white wine; sauteed other veggies-eggplant, red & green peppers, leeks & red pepper flakes. Also added appx 1/4C heavy cream, feta & cream cheese to taste because I love! After additions, soup's divine! I just threw all ingredients into pot quickly, bro't to a boil, simmered & processed. Next time I'll take time & roast tomatoes & other veggies 1st.

Black Bean and Salsa Soup

OMG!!!!! Bean Heaven! Here are my changes: Sauteed & added poblano, green & red peppers w garlic & onions. No scallions :-( & 4got I had leeks; next time. Doubled spices: cumin, seas salt, garlic & onion powder. Squeezed lime jc & topped w goat cheese, a dollop of sour cream & tortilla chips. Sleeping time.

High school FAVORITE after track practice or 4 breakfast! Can also eat with roast beef or pastrami (NYC thing!) Heat in microwave for 15-20 seconds only!!! Mmmmm!!!!

Roasted Okra

Wet, frozen dethawed okra aside, these were delish with the following added: garlic, garlic powder & cajun seasoning. Next time, will definitely use fresh! Ate 1/2, put the other in African Chicken Stew from site.

Spicy Baked Feta (Feta Psiti)

Seems like roasting softens the tang. Definitely add minced garlic, garlic powder, paprika, rosemary & oregano with other ingredients for a more diverse & beautiful offering. Gone in 1 bite. Okay, maybe 2...no crackers needed. They didn't last that long.

Roasted Garlic Cauliflower

Very bland. Cauliflower's like water, no flavor until it's added. I will definitely have to triple the spices and roast longer for that smoky aroma. Family enjoyed. Me, not so much.

Brazilian Fish Stew

Marinating fish is a must (24hrs). Next time I'll use heartier fish (cod). Added potatoes, tomatoes, zucchini(green & yellow), poblanos & red pepper flakes. FAMILY LOVED!

African Chicken Stew

This is a "kitchen sink" dish. Use any/every veggie u want. I included potatoes, carrots, celery, red & green peppers, scallions, roasted okra, 1/2 can stewed tomatoes, 1 Tblsp tomato paste & 1/3 jar salsa(hot). I doubled/tripled seasonings to taste. Added chicken broth & water. When finished (doesn't take long at all), topped with fresh chopped peanuts and scallions! My family LOVES!

Country Apple Dumplings

My family keeps "begging" me to make these daily! THAT's how good they are. I AM NOT a baker; I break out in hives just thikning about the process. I cut sugar to 1/4 cup each of white & brown; cut butter to 1/4-1/2 C. I tripled cinnamon, 2 capfuls of vanilla & poured Mountain Dew...Makes house smell like Cinnabon heaven! I'm a baker now...haha SO SIMPLE!

Best Ever Sausage with Peppers, Onions, and Beer!

I cooked this for my family prior to Christmas. They LOVED it & prior, hated Italian sausage (I snuck it in there on them.) I also made for this year's New Year's Eve gathering at a friends & everyone devoured it! I only added a little more heat (hot sauce), otherwise, everything else remained the same. I'm curious how seafood (shrimp & salmon)would taste, will try at another time. Definitely a keeper!
