Jumbo Breakfast Cookies

I made some substitutions. Half white and brown sugar, home ground whole wheat flour, walnuts, dark chocolate grain sweetened chips and a combination of rice cereal, crushed corn flakes and bunches of oats besides the oatmeal and then wondered if they would stick together long enough to get them on the baking sheet. I used an ice cream scoop measuring 1/3 cup and then wet my fingers and shaped the cookies, to my surprise they did not need the four inches between because they didn't spread that much baking so I only left two inches between and got nine cookies on my sheet. I followed instructions and allowed them the full five minutes to cool on sheet and never had them fall apart on me. They are slightly moist and chewy cookies and everyone has liked them so far. I will make these again using different cereals and extras.

Easy Pear Crisp

I used this recipe to make individual pear crisps in little oven proof baking ovals (I can't remember what they are called)they turned out delicious and all they needed was a dab of whipping cream or ice cream.

Pineapple Pretzel Salad

I really like the pretzel, cream cheese, fruit topping thing going here. I like the strawberry version of this recipe and was surprized I liked the pineapple version too. This could be served as a desert.

Judy's Strawberry Pretzel Salad

I don't know what it is about this salad but I have to be careful and not eat it all myself! I think the pretzels salty taste with cream cheese and strawberries are just a wonderful blend of flavor. I don't know why they call it salad when it could easily be served as dessert. I look for opportunities to make this.

Summer Chicken Salad

This is delicious. Most of the time I can't wait to let it sit overnight I have to eat it the same day. I didn't even think I liked dill that much but this is a great blend of flavors including the fruit too. When I think of chicken salad I think of this recipe.

Beetnik Cake

I had an abundance of beets in my garden so decided to make this cake. My family liked it almost as much as our family favorite carrot zuchinni cake I make with cream cheese frosting. I grated it with the large holes on my grater so instead of it being beige color it came out looking like cherry chip cake, so pretty! I will definately be using this recipe again.

Apple Raisin French Toast Strata

This is sinfully rich and so easy to make. It is wonderful to make up the night before and bake in the morning. I have made this for more than one brunch gathering. I take along the extra syrup heated for topping.

Almond Chicken Salad

I am actually giving the dressing a 5 star rating. I had visited a local resturant and had a chicken salad served over romaine and lettuce. It was delicious but I noted their was something more to this than the chicken and greens. Something had been sprinkled over the entire salad and it tasted like teriyaki sauce. So I discovered this sauce and sprinkle it over all my chicken salads.I love the blend of flavors. Add grapes, sliced apples, and raisins to your chicken salad with this sauce over it all.
