Ricotta Fettuccine Alfredo with Broccoli

For the most part, it was pretty simple. I found that I only needed about 5-7 minutes for the milk/butter/flour to thicken, not 15 minutes. I also took someone else's advice and threw the broccoli in the boiling water towards the end of the pasta cook time; it worked out well and less dishes to clean! It was definitely not as rich as a restaurant-style alfredo, but I'm guessing that's because of the ricotta, which hopefully made it a bit healthier though. It still had a great flavor!

Butternut and Acorn Squash Soup

I would have rated it a 5, but I halved the cream cheese to make it a bit healthier. The texture was still creamy and the flavor was delicious! This is my go-to squash soup recipe from now on!

New England Potato Soup

Great tasting soup! I followed the exact recipe, except I used fresh thyme, instead of dried. Fabulous flavor! Will definitely make this again! I love how it was so thick, yet there wasn't any heavy cream in it!

Flatlander Chili

The best chili I have had in a long time! I used V8 juice for the vegetable juice. A jalapeno pepper really spiced it up to a perfect level of heat!

Vegetable Chowder

Great soup! I cut the broccoli and cauliflower fairly coarse because I like chunky soup, and they still cooked down to almost nothing... next time I will chop even coarser. Soup tasted great and was the right consistency without using a blender!

Cream of Asparagus Soup I

Great Fall Soup!! Had friends over and they loved it! I used 6 small red potatoes and wished I would have used more. I would have liked to have more chunks, but it was still very good!

Broccoli with Rigatoni

Very quick and easy meal to prepare and clean up! My husband and I both loved it! I added some crushed red pepper for a little extra flavor and skipped the margarine/butter to cut out fat/calories. Also, I added a few tbsp of the starchy water I boiled the pasta in to the simmering broccoli.

Vanilla Ice Cream IX

Great basic recipe for vanilla icecream! I did substitute in more vanilla extract for the lemon extract, and I also added 1 oz. of Amaretto liquer to my milk for added flavor. I followed the tip to heat the whole milk and evaporated milk (and amaretto) to 175 degrees before adding to the sugar and eggs, and it turned out great!
