Shrimp Scampi

Reviewed: Sep. 12, 2012
Followed the recipe INGREDIENTS as is and it was restaurant quality. I just changed the method a little cuz I wanted to reduce the wine a bit more than the 30 seconds the recipe allows. Added the shrimp after the wine had reduced by about 1-2 mins. It was perfect and had everyone wishing there was more. Thanks for the recipe!

Mexican Bean and Rice Salad

Reviewed: Apr. 23, 2012
Very good base recipe for those who like to experiment and a solid recipe as is for those who don't. (I switched green onion for regular onion and added about 1 T each red wine vinegar and olive oil to make more of a dressed salad. I'll try it without the added liquids next time but it still tasted great.)

Corn Dog Muffins

My 8 year old made these in the toaster oven. He sliced each hot dog into about 6 slices and otherwise followed the directions. He LOVED them. Easy treat.

Zesty Slow Cooker Chicken Barbecue

EXCELLENT crowd-pleaser so for that, 4 stars. I'll add more spice (heat) next time, thus not the 5 stars.

Jalapeno Popper Spread

With or without the panko added to the parmesan topping, this dip is SOOOOOOOOOOOOOO good. Addicting might be a better description. Yum!

Loved it, though I did use Kale instead of spinach! Easy and tasty. Can't beat that combo!

Glazed Apple Cookies

Reviewed: Oct. 11, 2010
I baked up a storm today and these were part of the menu. Not sure what I did wrong? They were definitely flat, even with the baking powder/soda changes. I ended up making them into mini muffins because the cookies were so flat. I'll try again because the flavor was good.

Baked Teriyaki Chicken

Easy to prepare, excellent taste, terrible to clean up. (haha!) I've made several times, sometimes with breasts and/or thighs and much prefer the thighs. Thanks for the recipe!

Great base recipe! I toasted the nuts and seeds and ramen for a little extra depth of flavor. Good recipe!

Maria's Stuffed Chicken Breasts

I'm giving it 5 stars but I did add a couple things to jazz up the flavor a bit more. All in all, a great recipe! Thanks.

Stuffed Chicken Valentino

Reviewed: Jul. 11, 2010
I feel bad giving it only 3 stars but it just didn't impress me. IMHO, needed a sauce or something... but... who knows what I might've done wrong. Seems like the components were there but it just didn't come together, taste-wise, for me.

Fruity Curry Chicken Salad

Reviewed: Jun. 24, 2010
SERIOUSLY yummy; great texture, nice flavors with the combo of ingredients. Didn't quite let it "marry" overnight but about 6 hours - was perfect. Really tasty recipe! I put in pitas for some, and wrapped in butter lettuce for others. Thanks!

Phyllo-Wrapped Halibut Fillets with Lemon Scallion Sauce

Reviewed: Jun. 19, 2010
Swapped out COD for the halibut due to $$ but other than that, followed recipe exactly. Personally, I liked the sauce but only used a small spoonful for my whole piece. (In other words, a little goes a long way.) Husband and son didn't like the sauce but gobbled the fish. Great flavor, nice presentation, a bit more work than I like for a regular-night dinner but would definitely make again for a special occasion.

Basic Crepes

PERFECT basic crepe recipe. If you want it a bit sweeter for dessert crepes, add some vanilla/sugar/cinnamon. I just recipe-tested myself into not going to our favorite French restaurant for dessert!

Bacon Wrapped Pork Medallions

Reviewed: Jun. 10, 2010
Having made this recipe 10x or more, I will say it's always a croud pleaser. SO easy to prep ahead of time, is good served hot/room temperature/cold, etc. Half the time I don't pre-cook the bacon and whereas it's "fine", I *SO* prefer it when I do. That makes it nice though because it means either way it's going to turn out well. Obviously it can be seasoned any way you like but I do like this combo, with the use of 50% less sodium seasoned salt. Anyhow, simple prep, simple items, great outcome.
