Balsamic Roasted Pork Loin

Reviewed: Jan. 18, 2011
The flavor was delicious, but as other reviewers have mentioned, the meat itself is a little tough. Update: I take it all back. I've tried a few different variation on this recipe now. The meat was only tough when I let it marinate for only two hours. When you leave it overnight or even 2 nights it gets juicy, tender, and delicious. Also, carrots, butternut squash, sweet potatoes, and pretty much any sweet vegetable taste AMAZING roasting along with this dish in its sauce.

Poochie Meat Cakes

My dog has a rice intolerance, so I just replaced the rice with quinoa. He loved it. What dog is not going to love a meat patty though.

Doggy Meatloaf with Vegetables

Reviewed: Dec. 28, 2010
As always, so happy to see dog-oriented recipes. My dog was not crazy about the vegetables that were cooked on the side.

Too Much Chocolate Cake

Reviewed: Dec. 28, 2010
This cake is about as moist as plain chocolate cake gets, which I love! I health-ed it up a bit by using sugar free pudding mix, non-fat plain yogurt (for the sour cream), and apple sauce (instead of the oil).

Easy Pie Crust

Reviewed: Dec. 28, 2010
I've tried several variations on this now. All of them taste delicious. The only reason I'm giving 4 stars is because I think it's actually easier to make a pie crust with butter. The oil gets pretty messy. However, I think it's worth it for how much healthier this way is.

Slow Cooker Cassoulet

Reviewed: May 25, 2010
Like others I used chicken legs rather than breasts, because it tastes better. Also, I started out with dry beans rather than canned, which gave me a lot more control over the end flavor. I used beef broth, chicken broth, and white wine, in equal parts to cook my beans in. Then I added 3 baby leeks finely chopped in place of half of the onion, and added 1/2 TBSP of thyme. It was amazingly delicious! Cassoulet is one of those dishes that everyone has their own recipe for, so I think this recipe is more to let people know that it can be made in a slow cooker and give us the times and ratios, which I appreciate greatly. As far as the "dryness" others complained of, cassoulet isn't soup. This is the texture it's supposed to be. Thanks so much cooks4forty for this innovative and unusually healthful take on cassoulet.

Easy Slow Cooker French Dip

Reviewed: May 16, 2010
This was definitely very convenient and simple. My boyfriend and I both liked it. The sandwich was perfect, but the au jus sauce lacked complexity and just didn't compare with that I've had in restaurants. However, I'm willing to make the sacrifice considering how easy and economical this version is. Thanks lonwolf32:)

Picadillo

Reviewed: Dec. 18, 2009
I thought this was just okay, but my boyfriend loved it and he's from southern Florida, so he has much more discriminating taste in Cuban food than I do. I did have to double up on all the spices (again southern Florida boy) and I replaced the beef stock with white wine.

Whiskey Hamburgers

Reviewed: Dec. 5, 2009
I tried this on turkey burgers with lots of cayenne (because my baby likes things extra spicy). It was delicious! I did add a little extra whiskey right before they finished cooking, so there was kind of a whiskey glaze. Thanks so much for the recipe:)
