Almond-Crusted Halibut Crystal Symphony

This was not very good to me. The sauce tasted like a stick of butter, and I did not like the fish pan fried then broiled. Maybe if it were completely broiled, and the sauce had less than half the butter and more cream it would work better.

Snowballs II

These are really tasty. They are also really easy to overcook. I would recommend an air bake pan, and also, don't make the balls smaller than the recipe states unless you are prepared to check them every minute!

Cranberry Sauce Extraordinaire

Perfect! Sweet like a dessert, many people who didn't like cranberry sauce said they thought this was great. It is rich though, so most people only ate a few bites of it. I made a single batch for 15 people and had about half leftover.

Slow-Cooker Pepper Steak

Great flavor and tender meat. The only thing that didn't work out for me was that the liquid was very very thin after 8 hrs in the crock pot, so I had to pour it into a saucepan and add more cornstarch to thicken it up.

Bacon Wrapped Smokies

Super easy and delicious! The first time I made them, I tried sprinkling the brown sugar on top, and after I baked them alot of the smokies had chunks of unmelted brown sugar. So the next time I just dipped them in a bowl of brown sugar before I put them in the pan.

White Cheese Chicken Lasagna

My family loved this recipe. I used fresh spinach (cooked in a skillet with couple TBS of olive oil) and didn't think to squeeze all the juice out of it, so my lasagna was runny and fell apart. Lesson learned. But even though it was not very pretty to look at, it tasted REALLY good, and has been requested again by my crew!

Stabilized Whipped Cream Icing

I only make about 10 cakes a year for other people, so I'm far from a pro! This time the order was for whipped frosting, which I've never made. I tried a few, and this one turned out best! I used 50% power in the microwave for 30 sec, stuck it in the freezer while I beat the other ingredients (on low as suggested on several other recipes to make tiny uniform bubbles that won't pop). When I was done mixing, the gelatin was cool and I added that in. I kept tasting it and adding more sugar (I used all confectioner) and ended up using about a cup to make it frosting sweet. The consistency turned out perfect. I was able to make basic decorations with big tips, and once I put the cake in the refrigerator it kept it's shape for 24 hours, then for another 2 hours during a birthday party at room temp. before it got eaten. I made a 10' and 8' round tiered cake and needed 3x this recipe to finish the cake.

Avocado, Tomato and Mango Salsa

This is SO GOOD! I served it with sea bass. Next time I will try it with fish tacos. I only used 2 tomatoes, 1/4 tsp of salt, and no olive oil.

Spinach and Feta Pita Bake

Great recipe! My family did not like the sun-dried tomato pesto, it seemed to overpower the other flavors. I made it a second time with just pesto sauce, and it was perfect for us!

Date Nut Pinwheel Cookies II

These cookies are SO good! My grandmother used to make them when I was growing up, and now it just isn't christmas without them. My kids love their shape, and I love that they aren't too sweet. I used to run out of filling before I ran out of dough, but have learned that a very thin layer of filling goes a long way. Also, I refrigerate them overnight so that they are very easy to slice the next day. Thanks!
