mmmmmm. really easy. loads of flavor. and I didn't even use the balsamic. next time I will.

Penne Pasta with Spinach and Bacon
Wow! This is yummy and light (despite the bacon). I used a little less pasta, more garlic and added fresh ground black pepper and a little crushed red pepper and some feta on top. Wilted the spinach in pan as others suggeted and drained off some of the fat from the bacon. Also, use a quality can tomato such as Glen Muir to best flavor.

Thai Chicken Balls
the whole family loves these! I halved the recipe to "try" them. My kids are half Thai and we eat alot of authentic Thai dishes so I wasn't sure if they would like these. Next time I will make a double batch because they are already gone! I added a clove of garlic and about 1/2 tsp. of ground Thai hot pepper(we like SPICY!). Served them as a snack/appetizer with more sweet chili sauce for dipping. yum.
