I wish I had doubled the recipe! I did not have goat cheese, so instead, I used Daiya (mozzarella style) cheese--gluten free, soy free, & dairy free--both in the crust, AND for the cheese topping. I topped my pizza with a regular tomato-based pizza sauce, halved cherry tomatoes, green pepper, sliced fresh mushrooms, and diced red onion. I didn't know if this would go over well with my husband or not considering it was a "replacement recipe" for something he loves (AND I didn't tell him I wasn't using "real" cheese). He loved it. I loved it. I will be making this again, but next time, I will double the recipe so there will be left-overs.
