About this Cook
I am a SAHM of two children. I like to try new recipes. My huband thinks I'm a wonderful cook, fortunately he isn't picky and likes to try new things. I love fresh produce and herbs. I don't really like to cook, but I like eating and serving my family good food so I put effort into cooking.
My cooking tragedies
When I first started cooking for my husband and I after we married, I would always mess up a recipe. Fortunately my mistakes were never irrepairable and the recipes would turn out okay, but it was so frustrating.

Vegan Split Pea Soup I
I only used one stalk of celery. My husband and I thought this tasted like beef stew without the beef! It was very good.

Mom's Pineapple-Zucchini Bread
This is very tasty. Both times I've baked this, I used brown sugar instead of white and left out the raisins. I also shred the zucchini instead of chopping it and squeeze the excess liquid out. The first time I used pecans instead of walnuts. I also make one loaf and the rest as muffins. I think I actually liked the muffins better. I really like the taste and texture of the pineapple mixed in.

Coconut Tilapia with Apricot Dipping Sauce
This was so good. I made my own creole seasoning and didn't put as much cayenne pepper in as it should have to make it more kid friendly. (Although the extra spice would have been nice) I also used peach instead of apricot jam and added some plain yogurt to the dipping sauce. The best coconut shrimp I've ever had had a strawberry yogurt sauce with it, so I thought the yogurt would compliment it well and I was right.
