Mom's Baking Powder Biscuits

Excellent if you're looking for those "bisquick" style biscuits! The "makes 2-3 dozen" is WAY off though. I get 8 normal sized biscuits (using a small juice glass as my cookie cutter, making about a 2.5" biscuit).

Jalapeno Poppers I

ABSOLUTELY AMAZING! ONLY thing I did different was add a little chopped jalepeno and garlic to the cheese mixture. Anyone who says this filling is bland is either not using sharp cheddar, or doesn't realize that most poppers have ONLY cream cheese inside. This is definitely NOT bland! The corn flake crust is AMAZING and even though they're baked, they're SUPER crunchy and golden brown! I did blanche the peppers first, as other suggested, and I double-dipped in the egg/cornflakes. Absolutely wonderful for a baked version of poppers! Time consuming for sure... but will make again next year (and might plant extra jalepenos just so there's enough to last awhile!). I put most of the poppers on a tray and froze them (uncooked) - figuring I can pop them in the oven when I want. After just a few minutes the crust sets up nicely and you can even move them around without it coming off. THANKS for a great recipe!

Homemade Pancake Mix

Wonderful! My teen daughter has been pestering me to buy pancake mix, cuz "real" pancakes are "too hard" - now she can have homemade even when she's too lazy to do it from scratch. :) AND these came out BEAUTIFUL!

Spicy Stuffed Squid

EXCELLENT! As others have said, this recipe makes the squid VERY tender. Cut with a fork, easy to chew, and flavorful! Recipe withstands tweaking well. Usually I try to follow the recipe as written the first time, but I had to make due with what I had on hand. I used a whole grain/wild rice blend instead of white rice and it came out great (whole rice tends to not mush like white does). Didn't have anchovy paste, used hoisin paste instead (the only "paste" I had) and it still came out wonderful. Used craisins instead of raisins and sliced almonds instead of pinenuts. Would be better with pinenuts (what isnt?), but still gave it a good crunch. Will definitely be making this again.

Fresh Mint and Cilantro Melon Salad

Made this for a breakfast meeting and it was a huge hit! I love that it's not so sweet and dessert-like, as most fruit salads tend to be. Everyone loved the mint & cilantro combination and best of all... it gave me something to actually USE my mint for! :) I used cantelope, honeydew and strawberries. You could sub just about any fruit and have it come out delicious!

No Bake Choco-Peanut-Oatmeal Cookies

Couldn't find my mom's recipe, so tried this. LOVE that you don't have to stir it constantly like my mom's version... but these don't seem to set up quite as dry as I like them. On the bright side, they're MUCH easier to work with (hers dry out before you can even get them on the paper if you aren't fast enough!) and the flavor is the same. Fast and easy. YUM.

Cocktail Meatballs

These are absolutely fabulous. To the people saying they're too spicy... did you use chili sauce (generally comes in a can), or hot sauce (comes in a bottle)... chili sauce is not that spicy and certainly doesn't overwhelm the cranberry sauce. I've made these twice now and am making them again tomorrow. Took them to a potluck at work and everyone loved them - they were the first thing gone! I use frozen veggie meatballs, since I'm vegetarian. Even so, nobody could tell and everyone rave and asked for the recipe! These are definitely my new party take-along!

Poblano Corn Chowder

I've made this several times and I love it every time. I generally use a quart of half n half and a quart of 2% milk. It still comes out nice and thick, without making me worry about shaving ten years off my life expectancy. :) I use my food chopper to skip the puree step and experiment with extra veggies... carrots, etc work well. This recipe is pretty hard to mess up. :) I also omit the lobster base & shrimp, making it perfectly vegetarian. :) I've added Bacos (name brand bacon bits which are actually vegan!) before and that was good too. I've used every kind of chili known to man in this, and they all suit it well. :) Finally found a real poblano this time and used some ground habanero (still haven't found chile de arbol) and WHEW. Makes ya sweat, but YUM! :) Definitely makes more than 8 servings. I use my biggest sauce pan (normal largest size in your pan sets) and it fills it to about an inch from the top (but I usually throw in some extra corn too - use fresh if you have it!). It's great leftover though, which isn't always the case with dairy based soups!

Sophie's Zucchini Bread

Yummilicious!!! I picked this recipe because it uses more zucchini than most others and I have stuck with this recipe because it's AWESOME! I substitute 1c of applesauce for the 1c of oil, then lightly grease my pans. It comes out wonderful and VERY lowfat this way! I usually sub 1c brown + 1c white sugar, and 1c whole wheat flour+ 2c AP flour. Next time I'll do as another suggested and add some grated carrot. Fun recipe to play with - never lets me down!

Cathy's Banana Bread

I have made a LOT of banana bread, but never come across a recipe using sour cream. This was DELISH!!!! My 11yr old and I nearly finished off the first loaf before it cooled last night, and the second is gone as of this morning! Definitely a keeper!!!
