Easiest Peanut Butter Fudge

Reviewed: Dec. 27, 2005
I made this for Christmas and it flew off the plate. My adult kids and grandkids couldn't get enough of it. I changed the amounts to: 2 cups brown sugar, 1 cup peanut butter and 3 cups confectioner's sugar. Spread half into a 4 x 4 pan then added chopped walnuts to the other half and spread it into a 4/x/4 pan. Both kinds were devoured. This is deffinately sweeter than chocolate fudge, but oh sooooooooo good. Will be making this again.

French Onion Casserole

Reviewed: Dec. 27, 2005
I made this using 3/4 ground beef and 1/4 bulk Italian sausage. Browned the meat along with chopped onions, chopped green onions, chopped celery, Italian seasoning, salt and pepper. I didn't have French onion soup, so used 1 envelope Beefy onion soup mix with 1 1/2 soup cans of water. Do not add any more salt if using soup mix! Used instant rice and mixed all together. At the last 10 min. of baking, I sprinkled a mixture of shredded Italian and motzarella cheeses on top, covered and finished baking. Yum!

Cranberry Hootycreeks

Reviewed: Dec. 27, 2005
Made these for Christmas. These are so good. I used craisins for the cranberries, walnuts instead of pecans and milk chocolate chips instead of white as these were the ingredients I had on hand. I ended up using my hands to mix all together, but didn't think the dough was any drier than any oatmeal cookie. Dropped by rounded teaspoons onto cookie sheet, as I like smaller cookies and they did spread a little during baking. I really like the hint of oatmeal in these. My adult kids liked these too. These will be on my list of cookies to make for Christmas' in the future.

Ultimate Sugar Cookies

Reviewed: Dec. 27, 2005
Made these for Christmas and used the "Butter Icing For Cookies" recipe from this site. I followed the recipe exactly. I divided the dough into fourths, refrigerated the dough about 1/2 hour, then rolled out 1/4 of the dough on my lightly floured counter with wax paper on top of dough. Kept the rest of dough in refrigerator. Repeated 3 more times. I Had absolutely no problems. The cookies were a big hit with my adult kids and my grandkids. Will make these again.

Butter Icing for Cookies

Reviewed: Dec. 27, 2005
I made this for my "Ultimate Sugar Cookies" (recipe on this site"). I substituted liquid hazelnut coffee creamer for the cream and eliminated using any extract flavoring. This was sooooo good. Frosting hardened on the cookie just like I wanted. Could store cookies between wax paper without smudging any frosting. You need to work fairly quickly frosting the cookies. I just kept stirring in between. Didn't have any problems at all. My adult kids and grandkids just loved this. Will make again.

Cheese Ball I

Reviewed: Dec. 20, 2005
I have made this several times. I half the recipe, as the full recipe makes quite a lot. I roll it into a log, instead of a ball and then roll in chopped walnuts. Yum! Yum! Have had many compliments and requests for the recipe.
