I love to cook anything, but I would have to say my speciality is dessert.

Group Christmas baking with family and friends, then sharing the results. This gives a variety of treats without all the cost and effort, and you get to spend the day in the kitchen with the people you love.
My cooking triumphs
Modifying recipes to make them healthy and tasty, and managing to lose over 70 Lbs as a result.

Asian Tuna Patties
This is an awesome variation on tuna patties. I substituted Sweet Chili Thai Sauce for the ketchup for added zip. I found the cornmeal unnecessary so omitted it & didn't miss it. This has become a Friday night quick & easy go to meal with stir fried spicy veggies on the side.

Pork Supreme
This is a good recipe for leftover pork roast. To cut the fat calories I omitted the oil and sweated the onions & mushrooms with 1-2 Tbsp water instead. I also omitted the butter & flour to thicken the gravy and used 3 Tbsp cornstarch instead. This cuts the fat from 51% to 10%, which is significant for anyone watching their calories. I found the sauce a little to tomatoey and omitted the brown sugar & added 2 cloves of minced garlic & 1 Tbsp dried oregano.
