A-Number-1 Banana Cake

I "veganized" this recipe (no eggs and/or dairy); I also cut back on the sugar, probably 1/4 less than called for total (but added 1/2 C. dark chocolate chips). The batter was really sweet to me (the beauty of vegan baking -- 100% SAFE raw batter :P!!), but after all was said and done the cake really "mellowed" out after about a day. I frosted it with [vegan] "cream cheese" frosting and the two went perfectly together. I will definately make this again ^_^

Tofu 'Fish' Fillet Sandwiches

I did not have kelp powder so I did my best to crush up nori-sheets along with the breadcrumbs in a blender. These were easy to make once the tofu was prepped; I froze mine, thawed, then squeezed out most of the water before using in this recipe. I also made a vegan slaw to put on top of the sandwich (didn't use the dressing recipe) and it was so good! Thanks for a great idea!

Magic Peanut Butter Middles

SO good. I did not get 30 cookies out of one batch, however, I might have made the fillings too big. It's just as well, that means there aren't as many for me to eat. A more labor intensive cookie than, say, chocolate chip (when using a cookie scoop), but really worth it for a special treat. Thanks!

Homesteader Cornbread

I halved the recipe and used a glass 8x8 pan, along with substituting unsweetened soymilk for dairy milk. I also added 1/3 c. frozen corn kernels and about 2 Tbsp. minced jarred jalepenos. The sweetness of the bread and corn compliment the heat from the jalepenos. This is a great base recipe--quick and easy and tasty :)

Chocolate Frosting I

Great base recipe... I think next time I will take the advice of others and use more cocoa powder and less powdered sugar (I only made a half-batch this time) but it's still good. It goes great with the zucchini brownies (also from this site). Yum!

SO easy :) I used vegan margarine and vegan blueberry "yogurt" instead of the sour cream (didn't have any substitute at the time) and it turned out great. I also added about a 1/2 tsp. of cinnamon to the dry mix. Thanks for a great recipe!

Downeast Maine Pumpkin Bread

WONDERFUL. I used part unbleached AP Flour, part Whole Wheat flour; 1/4 oil and 3/4 c. unsweetened applesauce and reduced the sugar to 2 cups. I also used Ener-G egg replacers. It was very moist and the spice was good. I will use this as my pumpkin bread recipe from now on :)

Dutch Apple Pie with Oatmeal Streusel

Sooooo good! I used an 8" frozen whole wheat pie crust. I left the skin on the Jonagold apples (color + fiber) and diced them so they would cook. Based on other reviews I used 3 Tbsp. of flour with apples (and they seem not too runny) and reduced the crumble topping by 1/3 (due to smaller crust). I couldn't wait for the pie to cool all the way so I snuck and piece and mmmmm how good! Definately going to use this recipe again.

Chewy Chocolate Chip Oatmeal Cookies

I used 1/2 vegan margarine and 1/2 applesauce, evaporated cane juice for the white sugar, and egg substitute. Then, instead of nuts, I used soaked raisins and chocolate chips. I also added cinnamon to the dry mixture. This was a really good base recipe, easily veganized and something I will definately make again. I'm thinking next time dried cherries, walnuts, and dark chocolate chips will be good. Thanks :)

Banana Crumb Muffins

I've made these a few times now, always vegan (subbing out evaporated cane juice for the white sugar and canola oil for the melted butter [Earth Balance vegan margarine in the topping] and egg-replacer for the egg) and they still receive rave reviews. Thanks for a great recipe and one of my favorite ways to use up bananas I could just eat fast enough ;)

Zucchini Bread IV

Just made it... couldn't keep out of it before it cooled :X I didn't use eggs/dairy and it still turned out fine with the subsitutions (also 2:1 WW Pastry Flour to AP Flour, evaporated cane juice for white sugar, 1:1 apple sauce/oil)... I added chocolate chips to one half; walnuts to all. Not overly strong with zucchini but still GOOD!

Blueberry Buckle

Made this about two hours ago... had a piece nice 'n' warm from the oven; now I can't stop picking at it! TOO good!! Like some other reviews I reduced flour (used WW Pastry Flour instead of White), increased blueberries, and used evaporated cane juice in the topping. I also only ended up sprinkling on about 1/2 of the topping and that was plenty. I will DEFINATELY make this again. AWESOME!

Sloppy Joes II

I made these using tofu. I grew up with Manwich stuff from a can, but this is much easier to make, and I had all the stuff already on hand. I halved the recipe since I didn't have a full pound of tofu, and added some small-diced zucchini ('til the season so I'm trying to get rid of it!). I couldn't wait the 30 minutes for it to simmer, so I just ate it as soon as it was warmed through, with dill pickle stackers on top. SOO yum and a new favorite, easy recipe :)

To Die For Blueberry Muffins

I will give this recipe five stars, based on my alterations, though I believe the foundation recipe is a great one. I doubled the recipe and used 2.5C fresh blueberries overall; I used mostly WW Pastry flour, and reduced the amount of evaporated cane juice (for sugar). Also, I used the crumb topping from the 'blueberry buckle' recipe on this site. All in all, they turned out good for me. THANKS!

Penne with Spicy Vodka Tomato Cream Sauce

Recipe turned out excellent...however, I used the full pound of pasta (should have read the reviewers suggestions first!) and it soaked up nearly all of the sauce. I "veganized" the recipe using soy-based creamer and "Tofurky" sausages, and it still tasted great! I will definately make this again, just with a little less pasta. Thanks for a great recipe!

Cream Cheese Frosting II

Halved this recipe; used Tofutti "Better than Cream Cheese" (vegan substitute) and Earth Balance sticks. It turned out great and was a nice compliment to the (veganized :P) "A-Number-1 Banana Cake" recipe from this site (which is a tad on the SWEET side). Thanks for an easy recipe!

Granny Kat's Pumpkin Roll

I followed this recipe nearly to a T (just subbed non-animal ingredients to make vegan) and it came out...squishy. Maybe I should have baked for 20 minutes? I will definately try to make again...but now I have a pumpkin-y, floppy log in my freezer :(
