I made 1.5 batches just to be on the safe side and had leftovers. I used Wilton gels to tint the icing for this cake. I also used 1:4 ratio of Earth Balance (vegan butter substitute) to shortening (non-hydrogenated Spectrum brand). It turned out great... I received a lot of compliments :)
