Thai Pork with Peanut Sauce

Salmon with Brown Sugar Glaze

This is now my go to recipe for a quick salmon dish. Really, really good. I really didn't change a thing, though I was mindful of a reviewer saying there was too much mustard taste for her, and made sure the fillets were coated with a thin layer of Dijon. Served it with jasmine rice and a cucumber salad with rice vinegar and sesame oil. Very fast and tasty.

Cranberry Salsa

Very, very good! I made this to spoon over some smoked chicken enchiladas, and it gave a perfect finish to the dish. I did use poblano instead of a jalepeno. Rather than dump everything in a food processor, I processed the cranberries a cup at a time in a mini-chopper until the texture was right. Finely hand chopped the green onions, cilantro and pepper and stirred all of it up in a bowl with the rest of the ingredients. Refrigerated overnight and it was wonderful. I may try to cut back a bit on the sugar or substitute honey the next time, but it's just about perfect the way it is.

Cinnamon Swirl Bundt Coffee Cake

The first time I made this cake, it was a disaster. I don't think I've ever had a cake turn out that dry that hadn't been seriously overbaked, but something happened and it was inedible. The recipe was worth trying again, but I made some changes the second time around. I changed the 3/4 cup of butter to 1/2 cup butter and 1/4 cup canola oil, added 1/2 tsp of salt and then thinned the batter out with maybe 1/4 cup of water...the batter's thickness was what I had noticed about the first cake. I also took this cake out at 35 minutes rather than 40. VERY good cake. Perfect to go with coffee. Moist and not too sweet, but with a great flavor. Definitely a keeper.

Spanish Rice Bake

We really liked this. I made a few minor adjustments to suit us: I drained, rinsed and chopped the tomatoes, added 1/2 cup chicken stock to replace the tomato liquid. Sauteed the onion and bell pepper for about five minutes, and put some crushed tortilla chips I had on hand in the bottom of the casserole dish before I put in the meat mixture. This was a very easy and tasty dish. I can see adding some Mexican squash to it or maybe some beans or corn if I'm in the mood.

Roasted Garlic Bean Dip

I'll agree with another reviewer...way too much garlic initially (and I'm a garlic fan). However, I did make some changes, and I think this dip will work fine. First, I used plain yogurt instead of sour cream and increased it to 3/4 cup. I also added two tablespoons of lemon juice for a bit of zip. Caramelized the onion for some sweetness (from the recipe, I think that's a bit longer than originally stated). The main changes I made were in the spices. I used 1 tsp cumin, 1/2 tsp each of ground coriander, sumac, Aleppo pepper and paprika and then a pinch of Cayenne. With the changes made, I think this one served with pita bread will be a staple for us when we're doing a Mediterranean/North African menu.

Chocolate Peanut Butter Cup Cookies

Really outstanding. Really rich. I had to make a couple of adjustments since I didn't have peanut butter chips. I increased the Reese's from 10 to 15 and also used crunchy peanut butter since that's what I had on hand. A definite keeper!

Brown Sugar Chops

This was a good little recipe, though the chops were a bit dry. I used 3/4" boneless chops and the stated cook time was just too much. Next time I'll reduce the total time to around 35 minutes. I also topped this with caramelized onions and it was very good.

Thai Peanut Chicken

Very easy and tasty dish. Like another reviewer, I added a bit of molasses for sweetness. I also had some red/yellow bell peppers on hand, so I chopped up a couple of cups. And I exchanged red pepper flakes instead of Cayenne because it's what I grabbed. Definitely going to make this again. Thanks!

Salisbury Steak

I made an inadvertent change to this when I misread the recipe and threw out the French onion soup after using the initial 1/3 cup. I ended up making my own, which was very good, but I should have increased the salt in the meat part of the recipe. Overall this was quite good. Hubby liked it and I'll use my own beef/onion stock in the future and change the amount of salt in this.

Breakfast Casserole I

We liked this, but definitely want to make some changes. Maybe some green onion and bell pepper. The idea is good, and the dish is easy, but it was just a bit bland for us. I'll certainly make it again, but with a few changes.

White Bean, Spinach, and Barley Stew

We honestly didn't care for this stew. It was very bland even after spicing it with herbs, more garlic and stock. I can't imagine the stew with only garlic, rosemary and a pinch of red pepper flakes. There are just other recipes for soups that I prefer.

Cranberry Chutney I

Thisis a great recipe. I've been halfway looking for a chutney recipe to use in place of one I've had for a few years that just makes far too much chutney. This is perfect...about 3 cups. For those of you concerned about the vinegar taste, let me recommend making it a month before you plan on using it, put it in a storage container and freezing it. This mellows the chutney considerably and really can help improve the flavor.

Lemonade Cookies

I have to agree with a couple of the other reviewers. These cookies just didn't do anything for me. The dough was quite wet and the cookies were far too cake-like in texture and bordered on burned. I will say I like the idea of the lemonade as the liquid and a glazing medium, but I'll use that on a different recipe.
