Elegant Orzo with Wilted Spinach and Pine Nuts

Reviewed: Sep. 20, 2010
Delicious - I make this a lot. Definitely use the pine nuts, even though they are a bit expensive. Also, I never use 16 oz. orzo, that is just too much for this recipe.

Greek Potato Stew

Reviewed: Oct. 13, 2010
Simple and delicious. I doubled the amount of garlic. Next time I will add a bit more tomatoes and olives. This recipe makes a lot, so I will also cut it in half.

Lentil Soup

Reviewed: Oct. 18, 2010
This was delicious, especially with crusty bread! I used about 4 cloves of garlic instead of 2, and I followed other reviewers' suggestions by using vegetable broth for half of the water called for. However, if you like your lentil soup on the thicker side, you will not need all 8 cups of water/broth mixture.

Waffles I

Reviewed: Oct. 18, 2010
Delicious - nice and eggy. I have only ever eaten frozen waffles, so I never knew waffles actually tasted this way! I made this recipe as written, except that I used a bit less oil than the recipe calls for.

Braised Balsamic Chicken

Reviewed: Oct. 18, 2010
Really good - probably something to make every other week or so. Since I was making this for one person, I only used one chicken breast half and reduced the other ingredients accordingly.

Sweet Potato Enchiladas

Reviewed: Oct. 19, 2010
This was delicious, and I will definitely make it again. The only reason I am giving this recipe four stars is because of the changes I made to the recipe as written - some of which I think are necessary. After reading through all of the reviews I made the following modifications: I halved the number of sweet potatoes and cream cheese amount, but kept the chili power, cumin, and oregano measurements the same. If you are going to use the full amount of sweet potatoes and cream cheese, you really need to up the spices. Secondly, I cooked the sweet potatoes in the microwave for a few minutes rather than boiling them for 30 minutes. Thirdly, I used a tortilla warmer to heat up the tortillas in the microwave instead of frying. Lastly, I added a small amount of black beans into each tortilla before rolling them up (i.e., I didn't mash the beans with the sweet potatoes). Also, although I have made these with red sauce, I highly recommend trying with salsa verde (Goya brand is good). I also like to sprinkle extra green onion pieces once on top once out of the oven.

Hearty Vegetable Lasagna

Reviewed: Oct. 23, 2010
Very good, but I think you need to add more veggies to make this "hearty." I added a zucchini to the vegetables listed in the original recipe. Also, to save time, I used lasagna noodles that didn't need to be cooked beforehand.

Blonde Brownies I

Reviewed: Oct. 23, 2010
I followed the recipe exactly - except I used 1 t vanilla because 1 T seemed way too much. I also am not sure if the baking soda is necessary here. I did not like the consistency of these Blondies at all and will use another recipe next time.

Delicious - made the house smell really good, too! I followed the recipe exactly as written with respect to the ingredients. The only change I made was to cut the recipe in half and bake in three mini loaf pans (same cook time).

Good, except mine was a bit watery even though I sauteed the zucchini with the onions and garlic as other reviewers suggested.

This was delicious. It is also good with thinly sliced red onion and dried cranberries instead of fresh raspberries (which can be really expensive).

These are amazing as written! I have used chunky peanut butter and omitted the peanuts. I have also added milk chocolate chips to the mix, so good!

Butternut Squash Soup

Really good. However, I broiled the butternut squash to make it easier and for more flavor as other reviewers suggested. I also halved the amount of cream cheese called for.
