Slow-Cooker Chicken Tortilla Soup

This is a keeper, but there is no need to use cooked chicken. I used frozen breasts, cooked it for 9 hours, shredded the chicken and added it back in. No need to top with tortillas, either -- just use corn chips. This is a really great soup that is much easier than the ingredient list looks!

Nutty Wild Rice Salad with Kiwifruit and Red Grapes

This was only OK. The kiwi and grape added nice flavor, but I could not taste the dressing at all. If I make it again, I will try to add some zip to the dressing with garlic or paprika or ginger.

Pepperoni Polenta Pizza

This was extremely bland and just not that good. If I were to make it again, I would jazz up the polenta with (at minimum) some parmesan. Sorry, but I didn't care for this, and I do like polenta.

Slow Cooker Lemon Pepper Chicken

I followed the recipe but put potatoes in the crock as well. It was just not good. The breast meat was dry, the potatoes I put at the bottom of the pot were nasty tasting, and the chicken itself had no flavor other than chicken. My kids hated it, and even I couldn't finish it. Very unappealing appearance, too.

Blueberry Scones

I took others' advice and used almost 2 1/4 c. flour, 1/4 c. white sugar in addition to the brown sugar, and 1 to 1 1/2 tsp vanilla. I thought I'd made a mistake when the dough would barely stick together, but it stuck together enough and the end result was fantastic. My British neighbor asked for the recipe. Very yummy!

Hamburger Soup I

I'm not sure what all the fuss is about. This is like chili without the taste. Really really bland. Which might be OK for kids, except that even my kids didn't like it. I won't make this again.

Easy Shake and Bake Chicken

This has become a staple at my house. My kids even like it. I cut the butter in half (at least) and, if I could get PAM in Switzerland, I'd try that instead of butter. I also throw in whatever spices I feel like (cumin, cayenne pepper, ginger, you name it) along with the paprika and salt. A good, basic recipe.

Potato Curry

This is quite good as is, but I make it healthier by using 2 T olive oil instead of the ghee, fat free yogurt, and serve over brown rice. A heart-healthy meal that my kids will eat.

Original Irish Cream

I too made with fat free half and half and fat free sweetened condensed milk, plus only 1 cup whiskey. My husband, who before I made it said that he would buy the name brand anyway, ended up asking me to make multiple batches and he never bought the "real" thing. Made for a merry Christmas indeed.

Deluxe Sugar Cookies

Although they tasted good, these cookies were way too crumbly after being baked. They essentially fell apart when handled, which is less than ideal. I won't make these again.

Moroccan Salmon Cakes with Garlic Mayonnaise

I've now made this twice, although I used tuna both times instead of salmon, which is impossible to find in Switzerland where I live. I fried it once and made it in muffin tins once. The muffin tin idea is excellent and I highly recommend it. Be sure to spray or grease the tin, however. And don't leave out some sort of sauce (I prefer tzatziki myself) -- they really need some sauce.

Strawberry Cinnamon Oatmeal Muffins

I did not like these at all. I thought the taste of olive oil was overwhelming -- if you're going to make them, use vegetable or canola oil. And I thought the strawberries were strange. Would have been better without the strawberries as just cinnamon oatmeal muffins. Will not make this again.

Vegetarian Korma

Very good basic korma recipe, and if you have access to high-quality curry powder, it's even better. I made mine with chicken, which I sauteed with the onions. I used cauliflower instead of bell peppers, and subbed fat-free evaporated milk for the heavy cream to reduce the fat. I microwaved the potatoes for 2-3 minutes, but I don't think it was necessary because I cut them small enough that they would have cooked in the time allotted.

Honey Baked Chicken II

This is a new family favorite. I use half the butter (and sometimes sub olive oil for half that) to cut down on saturated fats. My picky 9-y-o daughter ate four pieces last time I made it.

Rosemary Roasted Turkey

I made this for Thanksgiving. Brined it first using the recipe suggested by Trivert. It was the best turkey I have ever made. And the carcass made the most delicious turkey wild rice soup. I will make this every year from now on.

Savory Kale, Cannellini Bean, and Potato Soup

As written, this is very bland. Believe it or not, it needs salt! My kids wouldn't eat it, so I should have made it more spicy from the beginning (and I used a Thai chili with the seeds). If I make it again, I will use more herbs, or maybe use dried herbs, which have more concentrated flavor than fresh.

Chicken Tinga Tostados

This is excellent and so easy. I used canned whole tomatoes (drained) with frozen chicken breasts in my crock pot. The key is to throw a cinnamon stick in as it cooks -- really adds to the depth of the flavor. It was so delicious and easy that I shared the recipe with my co-workers and one of them has made it 3 times in 2 weeks. Could use any meat -- turkey breast, pork, or beef. Very good flavor.
