Peanut Butter Muffins

OMG, these are amazing! I don't even typically like peanut butter in my baked goods but I wanted a muffin that was hearty and healthy so that I could grab on the go for work. I found it! I have no doubt the recipe is good as is, but I made a few substitutions based on what I had on hand. I used 1 cup all-purpose flour and 1 cup combination of flax powder and bran. Only other sub I made was almond milk instead of regular.

Coconut Orange Cupcakes

I am quite the cupcake lover. I love to bake, decorate and eat them! So you can imagine how many cupcake recipes I've tried out on my family, friends and my understanding boyfriend...well, yesterday he gave me the, "I think this is the best cupcake you've ever made" line. I thought the taste was wonderful. I will definitely make again, though I almost want to categorize this recipe as a muffin and NOT cupcake. Either way, it was great.

Toasted Pumpkin Seeds with Sugar and Spice

Peanut Butter, Mayonnaise, and Lettuce Sandwich

I LOVE Peanut Butter and I am always trying to find new ways to eat it. I enjoyed this sandwich though I recommend crunchy PB and adding a slice or two of ham or turkey. Wish I would have had some pickles on hand to top it all off.

Wine Cookies (Original Italian)

The easiest cookie recipe ever. Although to improve the flavor slightly I added about a teaspoon of vanilla and a half of a lemon peel chopped finely. Half the batch I coated with regular sugar like the recipe suggested, the other half I added a little color and coated them with small, round, colored sprinkles.

Salted Peanut Cookies

Although I halved the shortening the cookies were still sweet and salty enough from the sugar and peanuts that there wasn't anything lacking. Thanks for the recipe idea.

Old Fashioned Coconut Drops

I made these with half the amount of sugar that was called for and added some apple sauce to add the sweetness and a little moisture back into the dough. I also chopped up some dried apricots and prunes that I had on hand instead of the rasins and it came out excellent. The cookie was not overly sweet and the dried fruit added a little more to each bite.
