White Bread I

This was delicious and very soft! I made the dough in my Kitchen Aid Mixer with the dough hook. Add the warm milk, sugar and yeast and let sit for about 10 minutes. Then add the rest of the ingredients and mix for about 5 minutes. I needed to add more flour...not sure how much...but quite a bit until it kneaded in my mixer easily. Then I covered it and let it rise for 25 minutes, punched it down and put it in a sprayed bread pan. Covered it again for 10 minutes then took off the cover and turned on the oven. It rose for about 15 more minutes while the oven heated up. I baked it at 350 for 25 minutes and it was perfect.

Cowboy Oatmeal Cookies

These turned out great! I added 1 tsp vanilla and a cup of raisins. I left out the chips only because I thought I had some but didn't. Very tasty! Will make again.

Coconut Pecan Frosting II

This was delicious!! I whisked it just about the whole time. Once it started to bubble, I cooked it for 12 minutes to make sure it was thickened enough. I also toasted the coconut and pecans in a large dry skillet (at the same time) before adding it all together. Will definitely be saving this recipe!

Super Sausage Gravy

Excellent! My husband said this is teh best he's ever had. I did change a couple of things, though. I used Jimmy Dean Hot sausage because that's all I had (next time I might even try Sage). I added a little more milk to make more gravy (maybe an extra 1/2 -3/4 cup...I didn't measure). I also added some dried thyme. Will definitely make again and again!

I made this without the anchovies and it was still very good. Definitely make the dressing at least an hour ahead of time for the flavors to blend. The croutons were yummy, too!

Easy Oatmeal Muffins

After reading through the other reviews, I made some changes. I added one mashed banana, 1/4 cup brown sugar (in addition to the white sugar), 1/4 tsp cinnamon and 1 tsp vanilla. I lowered the temperature to 350. I also used regular oats(because that's all I had) and just let them soak a few minutes longer. These are tasty, but still could use a little pizazz (not sure what though). My little boy loves these. I'll probably make them again.

Enchilada Sauce

This was alright. Not great. I reduced the chili powder to 3 TBS which seemed about right for us-spiciness wise. Maybe it would be better if we used a higher quality chili powder as others suggested. Also, I would use a little less chocolate. We didn't care too much for that taste of it. It thickened up nicely after simmering for about 15-20 minutes.

Acorn Squash with Apple

We really liked this. I didn't have time to boil the squash whole as recommended so I just peeled it with a potato peeler. That was harder than I thought it would be, but got the job done. I followed the rest of the directions as explained. Turned out really good. I think I will leave out the nuts next time.

Roasted Potatoes with Greens

This was very good. I made a few changes, though. I used regular potatoes because that is all I had. I steamed them for a few minutes after cutting them up to start the cooking process. I used extra garlic. (My husband said to use even more next time!) I cooked them covered in the oven for about 20 minutes then uncovered them for another 15-20 minutes so they wouldn't dry out and get hard. I drizzled a little olive oil after tossing the spinach with the potatoes. Good. I will make these again.

Cornbread Muffins I

We make this often. It's easy and good. It always turns out great. I never take the time to defrost the corn and it still turns out great. My husband loves these. They are a tad on the sweet side, but very good.

Classic Mandarin Orange Salad

Very good! Didn't use olives or onions because I didn't have any. I think I'd add onions next time if I had them, but not the olives. It's great how we had it! Added almonds. Will definitely make this again.
