Mango Chicken Bake
My whole family loved this recipe! The combination of fresh ingredients were fragrant and delicious. I couldn't find tarragon vinegar and didn't have time to make it so I substituted white wine vinegar and chopped fresh tarragon. I also used brown rice so I boiled the water before adding it to the baking pan. The chicken was a bit overdone so next time I will parboil the brown rice and bake the dish for 45 minutes instead of an hour. Thank you for this wonderful recipe Nicole!

My Favorite Sesame Noodles
My boys ask for this over and over. I use organic freshly ground peanut butter and do not microwave or heat it. I do mix the sauce together at least 2 hours ahead of time and toast the sesame seeds. Sometimes I will top it with a bit of sliced grilled steak. This dish is also great cold the next day. My boys love spice, but I have learned to tone down the chili sauce a bit if they are having friends join us for dinner.

Braised Balsamic Chicken
This is the only way my 10 year old will eat chicken breast. I blended advice from several reviewers to make this more kid friendly. I cut the chicken into chunks to make it easier to eat and allow people more flexible serving sizes. I cut out the recommended spices and used Italian tomatoes and 3 cloves of crushed garlic. I used only 1/4 cup balsamic vinegar and added 1/4 cup chicken broth. I also covered the pan for half the cooking time to assure all of the chicken was cooked. I served this over brown rice for some and pasta for others along with roasted asparagus and salad. This was a super easy week day meal that I will definitely serve again. Thanks for a great recipe!
