Carrot-Topped Swiss Cube Steak

Very good, and adaptable recipe. I didn't have any fresh garlic left so I used some powdered garlic in the flour mix and it was really good. Truth be told, I prepared this the day before groceries so I was missing canned tomatoes too! Luckily I had some leftover spaghetti sauce and used that instead... again - it worked out so well! I would definitely make this again, because it is so flexible and easily tweaked! :)

Perfect Gluten-Free Peanut Butter Cookies

I found these cookies dry, like most gluten free recipes. Also they were slightly too sweet for my liking, but that atleast is something that can be adjusted to individual taste during the preparation. I would be curious to see how they turn out with chocolate chips added to them?!

Shrimp Spread I

This recipe is almost identical to something my mother in law has been preparing for years, and it was as big of a hit at my party! Even people who normally don't like shrimp enjoyed it! Hint: make double the quantity because the first serving disappears fast!

Pretzel Salad II

This was great -- I made it with gluten free pretzels, and light cream cheese, and it was still amazing!!! In addition, I was short on frozen strawberries and only used one 8 oz package, instead of 16oz. and it didn't even seem to be lacking... I look forward to trying the recipe with the right amount of berries!

Cornmeal Cookies I

I was surprised by these cookies -- they stayed fresh for well over a week in a tupperware container, and were delicious. We forgot to add the raisins, but even without them, the cookies were tasty, and had a shortbread like texture. I substitued the all purpose flour with a gluten free mix, but I couldn't tell the difference. I will definately make them again.

Coffee Liqueur Brownies

These are really good -- I didn't have any coffee licqueur, but I did have some Frangelico on hand... and I added walnuts because they belong in most brownies! I'm very happy with this recipe

Hot Chocolate Mix II

The reommended mix is somewhat watery. I used 3 tsp. for a more chocolately taste. I also added vanilla powder (1 tbsp) to the mix. Very good! Can be made with milk. Sometimes with both the water or milk there were particles at the bottom of the drink that turned me off, eventhough I *knew* they were from the powdered milk. To avoid this, make sure you don't have too much mix in the cup, and the temp. is high enough to disolve everything when you add it to the liquid. Keep mixing as you sip...

Hot Bacon Asparagus Salad

I made this last night at a dinner party and it was a hit -- my only recommendations are that there should be more bacon, and more eggs. I also threw in citrus marinated chicken strips to add some substance to the meal. Everyone loved it! I will make it again!

Barley Primavera

Excellent side dish -- I even enjoyed the zuchini, which is a rarity for me! A little extra lemon gives it a great zing, and it was just as good as a leftover the next day!
