Easy Baking Powder Drop Biscuits

If you're looking for a quick & easy biscuit recipe that doesn't require rolling or cutting, this is it! I made it as written and it was great, but I've also halved the butter and subbed almond milk for the milk and those were awesome too. Great drop biscuit recipe!

Fluffy Pancakes

This really is the best basic recipe I've ever used and it's my standby now. I saw another reviewer said they were even better without the butter, and I agree. Sometimes I use half white whole wheat flour to make them even healthier. I also love to add some apple pie spice and grate an apple into the batter, skin and all. The possible variations are endless!

Artichoke Dip II

This is my all-time favorite recipe for artichoke dip, and it's always a hit! A tip for cutting down on the mayonnaise flavor (and the fat and calories!) is to substitute half of the mayo with fat-free plain greek yogurt; I do this with all mayo-based recipes and it's one of my culinary secret weapons.

Blueberry Crumb Bars

Awesome blueberry flavor! I did add some lemon zest, since it complements the blueberry so well, as well as an extra tsp of cornstarch, just to be safe. The crust does seem dry when you're pressing it in, but that's what creates the delicate texture of the finished product. Very yummy!

Spicy Squash Casserole

This turned out great! I had a bunch of squash from my CSA, along with a pound of local ground pork so this was exactly the type of recipe I was looking for. I did half mayo, half low-fat cream cheese, kept some seeds in my jalapenos for additional heat, added garlic powder, thyme, white pepper, black pepper and plenty of salt. I could tell this recipe would need more seasoning by just reading it, which is why it got 4 stars instead of 5. Very tasty and flavorful with the addition of some basic spices!

Chocolate Frosting I

This frosting is great- so quick & easy to make, good chocolate flavor and the thickness is adaptable to your tastes, depending on how much milk vs powdered sugar you use. For those of you experiencing lumps, make sure you always start with room temperature ingredients. It makes a huge difference!

Tofu and Cheese Stuffed Shells

My newly vegetarian husband absolutely loved these stuffed shells! The sauce is a bit lacking, but I just threw in a few ingredients that normally go into my marinara sauce- a splash of red wine, crushed red pepper flakes and a touch of honey- to add more flavor. I also did all the veggies in the food processor, then added the rest of the ingredients and blended the filling until smooth. Since the veggies were ground, there was no need to cook them first, which saved time. I will definitely be making this often!

Emma's Belgian Waffles

These waffles are awesome! The egg whites make them light and fluffy, and the flavor is right on. If they get soggy on you while you're keeping them warm in the oven, turn up the heat...300 degrees and they'll be nice and crispy when you're ready to eat. Made some with crumbled bacon mixed in the batter as well!

Apple Pecan Cornbread Dressing

I made this last year for Thanksgiving and will definitley be making it again this year. The only change I made was using day-old bread cubes and a little poultry seasoning instead of the packaged stuff. The flavor is just what I was looking for and I love the cohesiveness of the finished product...almost like a spoon bread.
