Classic Strawberry Shortcakes

I followed the suggestion of another reviewer and made it more cake-like by adding 2 eggs and some vanilla and mixing with a mixed. I cooked it in an 8x8 pan at 375 for about 25 minutes. Delicious!

Turkey Wild Rice Soup II

Creamy Hot Chocolate

Black Bean and Salsa Soup

Delicious! Per other reviewers, I sautéed some minced garlic and onions and added it to the blender. I only puréed one can of beans and added the other one whole. I used ckn broth instead of veg. Fresh cilantro is a must! Served with cheese quesadillas.

Monkey Bread Muffins

Excellent! I doubled the recipe and followed other's advice and baked them at 350 for about 12 minutes. I sprayed the pan and they came out easily. I made my own "apple pie spice" like other reviewers suggested. I also added thin slices of apples amongst the layers and that was a fun addition!

Delicious Pumpkin Bread

I read a lot of reviews and made all of the changes that "SDOUGLAS" suggested, including reducing the sugar from 3 cups to 2 (I ended up using 2 1/2), more than doubled the spices, added cloves, (TASTE THE batter!), used 1/2 cup oil and 1/2 cup unsweetened applesauce, mixed dry ingredients and wet ingredients separately, and added 1 cup semi-sweet chocolate chips. I only cooked for 20-22 minutes and they were so moist. Even the ones that I didn't use a muffin cup for popped right out of the pan!

Baked Potato Soup

I used 3 medium whole potatoes and cooked them in the microwave (poke holes and cover with 1 dry paper towel and 2 wet ones) for about 10 min). then peel and cut into chunks and smash some. I used a teaspoon of minced garlic and 1 chopped garlic clove. Topped with real bacon pieces, sour cream, cheese and green onions. My husband said it might be his new favorite. He was bonkers over it! Next time, 1/2 the pepper. Used whole milk instead of half/half. Double recipe.

Zesty Slow Cooker Chicken Barbecue

Good, not great. Added 1/2 chopped onion and minced garlic. Cooked thawed chicken breasts on low for 2 hours (until done) and then shredded and cooked for another hour.

Chicken Enchiladas II

YUM! Next time, double the filling recipe. We also added 1/2 can of diced jalapenos...that amount will be okay if we double the filling. Definitely made it spicy! Also added chili powder to filling. Used 1/2 cup milk. That was good.
