Spice Cake I

Excellent flavor...just what I was looking for. I did think it was a bit dry, but not too bad though. I don't like coffee, so I just used orange juice instead.

Cucumber Sunomono

Darn..I didn't read the reviews before I tried this recipe. It was too salty for me...and I like salt. I would use 1/2 the salt next time. I will make this again because we have a ton of cucumbers in our garden, but just with less salt.

Quick Chinese-Style Vermicelli (Rice Noodles)

We tried this recipe tonight when guests came over and it was a hit !!! I did like others had suggested and doubled the garlic, chili sauce and soy sauce. I also used sesame oil for the regular oil and added shredded carrots and chicken.

Batman's Best Caesar Dressing

Excellent..just what I was looking for. Just the right amount of garlic and tanginess. I substituted cojita chesse for the parmesean cheese since I'm serving the caesar salad with enchiladas.

Banana Oat Muffins

Finally...a banana muffin that's perfect !!! I made a couple of modifications. I only had one banana so I made up for it with adding applesause. I substituted applesauce for the oil. I also added some chopped walnuts and coconut. Extremely wonderful muffins that baked up perfectly !!!

Easy Morning Glory Muffins

I love this muffin recipe...it has a little bit of everything and reminds me of carrot cake. I do have a suggestion that made them even better. I subsituted apple sauce for the oil and it made them a lot lighter and not so greasy. I also serve them with whipped cream cheese instead of butter.

The Cake That Doesn't Last

This is my new favorite recipe. I doubled the batch and put half in a bundt pan and the other half in mini loaf pans. I sent the bundt cake to work with my husband and took a loaf to work with me...the cake was a BIG hit. I made an icing for the top with the left over pineapple juice to "fancy" up the presentation.
