Made this with a 4+ pound boneless rib roast. Absolutely perfect. Like the reviews say, bring it to room temperature and the first stage takes about 25-30 min per pound. Great because it could sit and rest until everything else was ready - then just pop in the high temp oven for browning. Really, really perfectly cooked. Biggest downfall was that it doesn't produce drippings to make my Yorkshire :( And I probably answered my own question, I think it would cook the same with a larger roast, but I would check it before the time was up. THANKS Ken, I have been cooking and stressing over Prime Ribs for years, this is such an epiphany!!
Just curious if anyone has tried this with a larger roast and what modifications? Like in the 9-12 lb range. Thanks.
