Overnight Coffee Cake

Reviewed: Apr. 24, 2011
VERY good cake and quite easy. My daughter has made this 3 times now within the last 4 days! Two as gifts and just last night for us for Easter brunch. I would agree with a previous review that 35 minutes might the correct amount of time so I would suggest checking it then. (By the 3rd time my daughter had added a little more cinnamon to the cake and some extra cinnamon/brown sugar on the top just prior to baking...but those are just our preferences).

Backwards Prime Rib

Reviewed: Dec. 27, 2010
Made this with a 4+ pound boneless rib roast. Absolutely perfect. Like the reviews say, bring it to room temperature and the first stage takes about 25-30 min per pound. Great because it could sit and rest until everything else was ready - then just pop in the high temp oven for browning. Really, really perfectly cooked. Biggest downfall was that it doesn't produce drippings to make my Yorkshire :( And I probably answered my own question, I think it would cook the same with a larger roast, but I would check it before the time was up. THANKS Ken, I have been cooking and stressing over Prime Ribs for years, this is such an epiphany!! Just curious if anyone has tried this with a larger roast and what modifications? Like in the 9-12 lb range. Thanks.

Sugar Cookie Icing

Reviewed: Dec. 19, 2010
Quite simply the best. Only thing to note is that I find it takes a bit more milk to get it to the right consistency.

Asian Lettuce Wraps

Reviewed: Apr. 30, 2010
Great tasting easy recipe. I took some other reviewers suggestions and used ground chicken and fresh ginger instead of pickled (about 1 tsp grated). Also used about 2 T of the "optional" chili paste. I would half the amount of green onion and water chestnuts next time. Definitely works with the PF Chang style sauce that was recommended (1 tsp sesame oil, 2 T soy, 2 T rice vinegar, 1 T chili paste). Very good, makes more than you think.

Slow Cooker Thai Peanut Pork

Reviewed: Feb. 19, 2010
This wasn't really all that great. Too much peanut butter, the peppers were mush, the sauce too thick and it needed more "kick". Wasn't really thai at all.

Roasted Chicken with Risotto and Caramelized Onions

Reviewed: Jan. 12, 2009
My daughter (17) made this for her annual Christmas potluck with girlfriends. It was a HUGE hit! Only change she made was to remove most of the onions from the pan to a side bowl (to add the balsamic) and then reuse that pan for the risotto. I think cooking the rice with some onion gives it more flavor. I would highly recommend rotisserie chicken because it does boost up the flavor.

Devil's Food Sheet Cake

Fantastic recipe. Easy, moist, great flavor. Perfect amount of chocolate taste, not too sweet. Made them into cupcakes (made about 15) and used our own buttercream creation. A definite keeper!

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Oct. 10, 2005
One star only because the dish was easy and the meat was tender. But I did not think the flavors were good together. What was I thinking...red wine and soy sauce??

Slow Cooker Chicken and Dumplings

Reviewed: Oct. 10, 2005
Good basic recipe. Added carrots and potatoes, extra chicken, and a few chicken boullion cubes, because it took about 2 cans of water to cover the ingredients. As someone else suggested I used "Grands" biscuits but I won't do that again. Use regular biscuits and only one can. Put them in 2 hours before serving. Before I added the biscuits I also thickened it with a cornstarch water slurry.
