I really enjoyed this dish. I didn't add the broth, added water instead. The other thing that I did different was that I put the noodles in the pan, added the butter, and cheese with the egg and mixed it up. I then added the beef mixture and topped that with the bechamel sauce. Just like my mother used to make. Thanks for sharing this recipe!

Peanut Butter Balls III

This was delicious. I have never had peanut butter balls before, but they are similar to buckeys, with out the cereal. I found that forming the balls was a little difficult because the mixture kept sticking to my hands. I solved that problem by dipping my fingers in some water. I brought some into work and everyone thought they were great.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

I thought this turned out great. I used fresh tomato instead of the cherry tomatoes because that is what I had on hand. This would be delicious with chicken as well. Next time, instead of feta I am going to try goat cheese. The sauce would be wonderful on pasta as well. Glad I tried this!

Chicken Breasts with Balsamic Vinegar and Garlic

This dish came out delicious. I wasn't sure if the garlic was to be chopped or left whole so I chopped them. I didn't flour the chicken but did pound it thin. I also left out the mushrooms, as my husband does not like them. I used vegetable broth and also used corn starch to thicken the sauce at the end. I served this with brown rice and broccoli. I will be making this again!

These came out fantastic! I made these for our annual Christmas Eve party and they were the first things to go. The only problem with them was that they leaked while baking, which is probably my fault becuase I used less feta cheese ( 8 oz)than the recipe called for. I did make them ahead and froze them on a cookie sheet. I may try it with some fresh mint next time instead of the parsley. My brother likes them with some sugar or honey on top, so good! A little time consuming but very much worth it with all the compliments you will receive =)

California Chicken Spaghetti

This was very good. I did't use fresh tomatoes. I used canned crushed tomatoes with basil. I only used 1 T of the Cajun Seasoning (did't have Blackend) and it was the perfect amount of heat. Tossed with Whole Wheat angel hair. It only took about 20 mins from start to finish!

Coconut Macaroons III

These were very easy to make. The baking time was about 20 mins for a nice golden color. I used 1 1/2 tsp of the vanilla and 1/2 tsp of Almond extract. I was left with a strange after taste though, which I think had something to do with the Almond Extract. I used parchment paper and had not problems with sticking. Half the batch I added chocoloate chips and the other half I left plain. I wasn't too crazy about these, but I am giving them 4 stars because my husband would not stop commenting on how good they were.

Absolutely Fabulous Greek/House Dressing

This is a really good dressing and marinade. I add a little bit of lemon juice and some water to break up the acidity. Becuase I add the lemon juice, I store it in the fridge.

Rosemary Roasted Turkey

Barbie's Tuna Salad

This was really good. I usually make plain tuna with mayo but decided to search for a recipe. It was soo good. I didn't have any parsley, dill or relish ( I used pickles instead and added some sugar) and forgot to add the garlic powder and it was still really good. I'm going to go to the store to get those ingredients to I can make this recipe again, the real way!

Dad's Pan-Fried Green Beans

Very good. I served this with grilled salmon and brown rice. I used reduced sodium soy sauce and frozen french cut green beans. I plan on making these again for sure.

Enchilada Casserole III

I loved this dish. I made my own enchilada sauce though. I added a layer of cottage cheese with the shredded cheese and roasted poblano peppers. I served it with sour cream, chopped onion, chopped tomato and salsa. For a side dish, I made spanish rice with Goya Sazon and a salad.

Apple Cranberry Bread

I went apple picking and was looking for a recipe to use up some of my apples. I didn't have enough flour so I made some out of oats. I had old fashioned oats that I ground to a flour. With only 2 Tbls or Oil and the oats, I think this is a pretty healthy breakfast bread. I used dried cranberries and baked it for 60 mins. The recipe did not say to pre heat the oven so I did't, not sure if it would have made a difference or not. Between my husband and I we finished it off in less than 24 hours!

Orange Oatmeal Muffins

Great for breakfast muffin. I used1/2 whole wheat flour,1/2 apple sauce and 1/2 butter, used all OJ, no water,added dried cranberrys and a couple of tablespoons of ground flax seeds. I will use a little less sugar next time since I added all OJ, they came out a little on the sweet side. They came out very moist and were not crumbly. Delish!

Greek Avgolemono Chicken Soup

This is my all time favorite soup. It's exactly the way my yiayia taught me how to make it when I was a young girl. It's now my nephew's favorite soup and he asks for it all the time. I wouldn't change a thing. If you are short on time, use a pressure cooker to cook the chicken. I also use chicken leg quarters and skim the fat that rises to the top.

Peanut Butter Cookies IX

I think these are going to be my all time favorite cookies! They are outstanding. I followed the directions exactly, except I used 1/2 c of each sugar. The dough came out crumbly but I just rolled it into a ball and had to press them down on the cookie sheet. Next batch, I will roll them and press them with a fork. They didn't spread at all. I wonder if I use reduced fat PB if the texture would change at all? I used Trader Joes all Natural Salted PB so I think next time I will use 1/4 tsp of salt instead of the 1/2 tsp. I used unsalted butter and Old Fashioned Oats. They came out cripsy on the outside and chewy on the inside. I baked these for about 11 mins on 375. My husband would not stop making "mmm" noises with every bite. Even the next day he said they were the best cookies ever! I just realized that I used baking powder instead of baking soda and they still tasted good... **UPDATE: I just made these again for a work party and I used Baking Soda, 1/2 c of each sugar and Reduced Fat Jif PB. I also left the butter at room temp for the whole day, I then mixed the oats with the flour and added it to the cream mixture, then I mixed in the chocolate chips. This time the dough was just like Toll house cookie dough and it was easy to spoon on the pan. They came out nice and flat, but still soft and chewy.

Health Nut Blueberry Muffins

Really good healthy muffin recipe. I didn't have wheat germ so I used ground flax instead. I also used 1/4 c brown sugar and 1/2 c white sugar. Didn't have buttermilk on hand(who does?) so I used 1 t of lemon juice with the milk. I didn't use the nuts. The top comes out golden crispy and chewy and the inside moist and soft. This is the perfect breakfast muffin. I plan on freezing them and taking them to work. Next time I may add an extra banana for some added natural sweetness.
