These came out fantastic! I made these for our annual Christmas Eve party and they were the first things to go. The only problem with them was that they leaked while baking, which is probably my fault becuase I used less feta cheese ( 8 oz)than the recipe called for. I did make them ahead and froze them on a cookie sheet. I may try it with some fresh mint next time instead of the parsley. My brother likes them with some sugar or honey on top, so good! A little time consuming but very much worth it with all the compliments you will receive =)

Chicken Breasts with Balsamic Vinegar and Garlic

This dish came out delicious. I wasn't sure if the garlic was to be chopped or left whole so I chopped them. I didn't flour the chicken but did pound it thin. I also left out the mushrooms, as my husband does not like them. I used vegetable broth and also used corn starch to thicken the sauce at the end. I served this with brown rice and broccoli. I will be making this again!

Caramel Apple Pork Chops

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

I thought this turned out great. I used fresh tomato instead of the cherry tomatoes because that is what I had on hand. This would be delicious with chicken as well. Next time, instead of feta I am going to try goat cheese. The sauce would be wonderful on pasta as well. Glad I tried this!

Peanut Butter Balls III

This was delicious. I have never had peanut butter balls before, but they are similar to buckeys, with out the cereal. I found that forming the balls was a little difficult because the mixture kept sticking to my hands. I solved that problem by dipping my fingers in some water. I brought some into work and everyone thought they were great.

I really enjoyed this dish. I didn't add the broth, added water instead. The other thing that I did different was that I put the noodles in the pan, added the butter, and cheese with the egg and mixed it up. I then added the beef mixture and topped that with the bechamel sauce. Just like my mother used to make. Thanks for sharing this recipe!
