Mimi's Smoked Salmon Chowder

My first time having smoked salmon chowder and it was delicious. I didn't have tarragon or wine and I added corn. I also didnt cook it that long after adding the salmon. It was delicious! I used Coho smoked salmon from trader joes.

Sweet, Sticky and Spicy Chicken

I made this using sliced boneless chicken thighs. I cooked them until they got a nice crispy crust on them and then added the sauce. I used 1 tbl of sriracha and I thought it was just right, my husband thought it was too spicy. The chicken stayed crispy and sticky (I didn't add any flour). I served over brown rice and sir fried carrots. So quick, easy and delicious.

Muesli

I've never had muesli before but I love granola so I gave this a try. It's very versatile. I did a google search on muesli and found that most people soak it in yogurt (with a little apple juice or milk to thin it out) overnight and they add fresh grated apple. This was a delicious breakfast that kept me full all morning.

Canadian Barn BBQ Sauce

I would totally make this again. I used sweetend applsauce so I cut the sugar down to 1 1/2 cups. Didn't have paprika so I used chilli powder, no garlic salt so I just used garlic powder. I used Apple cider viniger instead of lemon. I made pork loin chops in the slow cooker using this sauce. They came out so tender!

Black Beans and Rice

I have made this several times. I add 1/4 tsp of turmeric and I get a delicious yellow color. I use half the beans and serve this as a side dish. I rinse the rice until the water is clear, that way I get perfect fluffy rice every time, just like my favorite mexican restaurant.

Best Brownies

I halved the recipe. Mixed everything in a 4 cup pyrex measuring cup. Melted the butter in the microwave and just stirred everything together with a fork. Next, I put the batter in a 6 cup muffin pan that I sprayed with pam and I baked for 13 mins until the ends looked done but the center looked soft. OMG, these were amazing! I didn't make the frosting, I had them with Ben and Jerry's vanilla ice cream.

Pizza Dough I

This is so easy, even a monkey can do it!lol I used my kitchenaid with the dough hook attachment on speed 2 for 7 mins. I plopped it on a greased pan and pressed it down and out to the edges. I then added my toppings (chicken, bbq sauce, cheese and sliced onions) and when I was finished adding the toppings I then pre heated my oven to 400. I won't be buying Trader Joe's Dough anymore. This one tastes better. So super easy and so yummy. I used Rapid Rise Yeast.

Golden Yam Brownies

This is yummy! I did make some changes and am noting them here for when I make this again. I halved the recipe,used 1/4 c of ww flour, used a cooked yam since that's all I had, but plan to use a fresh one next time. I used 1/2 apple sauce 1/3 canola oil. I did use the glaze and used the real butter it called for and also added a 1/4 tsp of cinnamon. These alterations were based on a half recipe. This was plenty sweet and incredibly moist.

The Best Banana Bread

I added 1/4 tsp of cinnamon and 1 tsp of vanilla. I also substitued canola oil for the butter. Super easy and spre yummy. i have made these into mini muffins as well as loaves.

Grampa's Coriander Turkey Sausage

This is are really yummy recipe. I sometimes change up the spices, adding sage, clove and ginger. It's just the taste that I have been looking for. Sweet, but not too sweet.

Crackle Top Molasses Cookies

I search by ingredient since I didn't have any butter and wanted to bake cookies for my sister's house. I added 1 tsp vanilla, 1/4 tsp of salt and used half white half whole wheat flour. They ended up baking at 10-12 mins. Perfect texture, chewy middle and nice crisp edges.

Curried Coconut Chicken

I added potatoes and carrots to the dish. I used canned chopped tomatoes ( not stewed) and cooked the curry in the oil for a few minuets like the others suggested. I used light coconut milk from trader joes. I don't have anything to compare this to since I rarely eat curry, but man this was good!! I served this with brown rice. This had plenty of spice, I didn't need to add any extra heat. All curry powders are not created equal so check before you add any more spice.

Granola Energy Bars

I changed this up to my tastes and based on what I had on hand. Did not use raisins, wheat germ, honey, butter or chocolate chips. I added 1/2 c. ground flax, 1tsp ginger, 1/2 tsp of cloves, 1tbl cinnamon, 1/2 c apple sauce, 1/2 c. brown sugar, 1 tbl molasses and canola oil instead of the butter. I ended up using my hands to mix this up. This is a very forgiving recipe. I didn't measure most of the ingredients. The sunflower seeds were toasted unsalted and the sesame seeds I used were not toasted. Since I used the sugar and not the honey, I added the applesauce for the moisture.

Aussie Chicken

I didn't have seasoning salt so I marianted the chicken in worecester (I got the idea from Alice's chicken recipe on this site) and Montreal Steak seasoning. I also grilled the chicken just because it was super hot out. I didn't use mushrooms because my husband hates them so I caramelized some onions in the bacon fat after cooking the bacon. I served it with noodles and a salad with the extra honey mustard (which was delicious btw) I will use the sauce for salad dressing and a dipping sauce for chicken fingers.

Ginger Glazed Mahi Mahi

Yum! I didn't use Mahi Mahi, I used either cod or pollack ( just grabed what was in the freezer). I didn't marinate it too long because I didn't want to "cook" the fish, since mahi mahi is a meater fish than the pollack or cod it can take the long marinade time. I didn't use honey, I used brown sugar. I loved it. I served it with Carrots and brown rice.

Cranberry Pistachio Biscotti

I've tried so many different biscottis and I love the flavors and texture of these. The combo of vanilla and almond extract is so good. I have been making these once a week to eat with my coffee every morning. I do use canola oil instead of the light olive oil. I only have evoo in the house and that would be too strong. I also use walnuts instead of pistachios only because I have a giant bag of walnuts right now.

Sweet and Sour Chicken III

I followed the suggestions of others and used a 20 oz can of pineapple and made double the sauce (used all the juice). I added more ginger and only used green bell peppers since that is all I had. I also added an onion. I mixed the sauce in one bowl and added the pineapple with the vegetables so they can get sauted too. I plan on making this again soon.

Smooth Sweet Tea

Thank you for this recipe!! Mcdonalds stopped selling the sweetea for $1 so I was looking for a way to make it at home. I tried other recipes and they tasted bitter. I thought it was the lipton tea bags that I was using, but it wasn't. I was missing the baking soda. Wow, what a difference a pinch makes, the sweet tea is so smooth and delicious!
