Mom's Fabulous Chicken Pot Pie with Biscuit Crust

This was awesome. Made as is, with 2 exceptions due to what I had on hand. Used corn instead of peas and used regular milk instead of half and half. It was perfect. I will make again for sure!

Campbell's Kitchen Easy Turkey Pot Pie

I made a variation of this last night for dinner. I used fresh veggies that I steamed for a few minutes first. Added a shake of italian seasoning for extra flavor. Also, didn't have any bisquick, so used a package of pre-made biscuits and topped the potpie and baked until the biscuits were done. One additional mention is that I added a 1/2 can of milk to the mixture so it wasn't so thick, but it baked up beautifully. (Side note: I had to go somewhere before it was done in the oven, my husband and 2 year old ate 2/3 of it and then my hubby took leftovers for lunch. He didn't let me have ANY of it!)

Sweet Potato Casserole I

EVERYONE loved this one! I made a few changes to suite my families needs: instead of 1 cup sugar, I used 1/2 c splenda, I replaced the mile with evaporated milk, for the topping I used walnuts instead of pecans, and I used 1/2 c brown sugar splenda blend. One other change was that I didn't cook the sweet potatoes first as when mine came out of the can they were really mushy enough to use right away. Oh, I also added 3/4 t nutmeg & 3/4 t allspice as suggested by another poster. All in all, this dish was gobbled up by everyone! I will use this again!

Marinade for Chicken

This was fantastic. I made only one change to the recipe and it was by mistake. I used lime juice instead of lemon juice. Grabbed the wrong bottle. It added a deeper layer of flavor. I will make this mistake again! Also used dried parsley, as it was all I had on hand. I used on chicken thighs (with drumsticks attached) and let them soak all day while I was at work. Threw them one the BBQ and then devoured them when they were ready. I halved the recipe, but probably could have quartered it. It makes a TON. Thank you for the submission.

Oatmeal Pancakes II

This was great. Did as others suggested and used half the salt. Also used vinegar and milk to make buttermilk. Topped with a variety of homemade jams and everyone was happy, including the baby who ate 1 1/2 of them!!!

Whole Wheat Pancakes

I rarely give anything 5 stars, but I have to say this was delicious. I followed the recipe exactly, which is rare. I even had unsalted butter! I ate 3 of them, which is even more rare. They were so thick going on my griddle, I thought I must've done something wrong, but I pushed them down a bit and they were so light and fluffy, probably 3/4" thick! Yummy in my tummy!

Roasted Beets and Sauteed Beet Greens

I've never rated anything a 5 on this site before, but this was delicious! My husband cooked this for me after I dug up some beets from my garden. I had already cooked the beets and he sauteed the greens and the other stuff to add to it. It was perfect. He didn't like it, but it wasn't the recipe. I guess he just doesn't like beets!

My Crab Cakes

I mostly followed this recipe. I forgot and mixed in the bread crumbs, but I had some seasoned stuffing mix that I crushed and added to the outside before frying. It was scrum-deli-icious!!! 11/17/08 - Just made this again and again I mostly followed the recipe. Still 5 stars!

Playgroup Granola Bars

I'm sure I've rated this before, but we made them again. We always add a few extras that we have on hand. I even used whole wheat flour. I added 1/2 applesauce to give it more juice. Also, my egg was gigantic, which probably helped too. We add: flax seeds, coconut, raw sunflower seeds, whatever we can find. My daughter loves to help and then eat her creation and this is a perfect project for her. She can't overmix it and its great tasting too. Thanks for sharing!

Thousand Island Dressing II

Perfect! Just what I needed! Nice and thick. I used lowfat mayo just to save on calories. I put it in an old Thousand Island dressing bottle, and no one can tell the difference!

Basic Chicken Stock

This was fantastic! I didn't clarify it. I stuck it in the fridge and after the fat got hard I picked it off and tossed it. I didn't need it to be clear. The flavor was outstanding! I didn't know it could be so easy to make stock/broth. I may never use store bought again!!!

Easy and Good Honey Mustard Salad Dressing

We loved this. I didnt measure anything, but used a spicy brown mustard container that was on its way to being empty. Added olive oil, lemon juice and honey. Shook it up until it all blended and we loved it. Thanks for the idea!

Whole Wheat, Oatmeal, and Banana Pancakes

I followed this almost to the letter, with the exception of souring my milk first. I thought that buttermilk would make it better. It was delish! I didn't expect the banana flavor to come through like it did with one banana, but it was a great surprise! Next time I will just beef the recipe up, by adding wheat germ and flax seed, but that is just a preference. Anyway, fantastic!!!

Cheesy Carrots

Here's the thing with this recipe: I wanted to follow it exact, I usually do when making it for the first time. The problem was that I was out of sharp cheddar cheese, which could have been a problem, but Costco just talked me into buying some horseradish cheddar. Since I saw a few other recipes for carrots that had horseradish I thought, hey it's worth a shot. And guess what, this turned out delicious!!! Chock one up to Costco for making me buy some weird ol' cheese!

Southern Peach Cobbler

this is by far my favorite recipe. I've used it several times. Since I live in CA I either use fresh peaches, or frozen from my moms tree. This is so easy and it's delicious. One note though, I haven't figured out how to store it if we don't eat it all. The crust gets mushy, but I don't usually have that problem!!! I wanted to add that I made this for a friend's son that is allergic to milk, so I made a really small portion and used soy. It made no difference. It was still delicious and he gobbled it up, enjoying his own personal dessert.
