Stuffed Zucchini

I mostly followed this recipe. I had defrosted ground beef instead of sausage and I'm sure it would have been better with sausage. I also cooked my zucchini a bit in the oven in some water face down as it was the size of a tree and I didn't want it to be too tough. Also, I totally forgot the cheese...not sure how that happened...rough day, I guess. Anyway, it was good and I'll do it again. Thanks for reminding me of such a great way to use those monster zucchini that hide in my garden!

Turkey Garbanzo Bean and Kale Soup with Pasta

I really liked the ingredients. Followed the best I could with what I had on hand. Used homemade chicken broth which changed the flavor quite a bit. Next time I think I'd prefer white beans instead of the garbanzo. The kind I used had a really rough unappealing texture.

Whole Wheat Blueberry Muffins

These are great! I doubled the recipe for 2 dozen and it made even more than that. I followed the recipe exactly, with the exception of using white whole wheat flour (its what I had). It probably made them a bit lighter than using regular whole wheat flour. On our way to share them at a playdate!

Quinoa with Peas

So, I misread the recipe (didn't have on my glasses) and put the cheese in with the peas. So, I am rating on the flavor. I didn't rinse the quinoa first because I thought wet toasted quinoa sounded like a bad idea. The toasting gave it a richer nutty flavor. Thanks for the idea and I will use this technique again. I rated on the flavor since I messed up the cheese. Nice side dish!

Campbell's Kitchen Easy Turkey Pot Pie

I made a variation of this last night for dinner. I used fresh veggies that I steamed for a few minutes first. Added a shake of italian seasoning for extra flavor. Also, didn't have any bisquick, so used a package of pre-made biscuits and topped the potpie and baked until the biscuits were done. One additional mention is that I added a 1/2 can of milk to the mixture so it wasn't so thick, but it baked up beautifully. (Side note: I had to go somewhere before it was done in the oven, my husband and 2 year old ate 2/3 of it and then my hubby took leftovers for lunch. He didn't let me have ANY of it!)

Makeover Zucchini Apple Bread

As it turns out, I'm a moron. I put 4 cups of shredded zucchini in this bread and baked it in 12 large muffin tins. Don't ask me...I have no idea. Even with that, they were delicious. A complete meal!!! Next time I'll pay attention. I promise.

Italian Sausage Soup with Tortellini

This was perfect. Made a double batch and served the neighborhood. Followed the recipe almost exactly, with the exception of using canned tomatoes rather than fresh. Delish!

Whole Wheat, Oatmeal, and Banana Pancakes

I followed this almost to the letter, with the exception of souring my milk first. I thought that buttermilk would make it better. It was delish! I didn't expect the banana flavor to come through like it did with one banana, but it was a great surprise! Next time I will just beef the recipe up, by adding wheat germ and flax seed, but that is just a preference. Anyway, fantastic!!!

Playgroup Granola Bars

I'm sure I've rated this before, but we made them again. We always add a few extras that we have on hand. I even used whole wheat flour. I added 1/2 applesauce to give it more juice. Also, my egg was gigantic, which probably helped too. We add: flax seeds, coconut, raw sunflower seeds, whatever we can find. My daughter loves to help and then eat her creation and this is a perfect project for her. She can't overmix it and its great tasting too. Thanks for sharing!

Berry Smoothie

I really liked this smoothie. My berries were not very sweet, so I added 1 T honey, which wasn't enough so I added some splenda too. My berries were frozen in individual bags (from a friends farm) so they were plenty juicy which was perfect! So yummy and healthy and fat free, too!

The Best Banana Bread

This was tasty. I used 1/2 whole wheat and 1/2 regular flour, as well as 1/2 white & 1/2 brown sugar. I know it made mine more cake-like, but that was OK with me. I still like my mommas recipe better...but only she can make it that way. In the meantime, this will do just fine. Nice and easy which was great because my 3 year old wanted to help. Thanks!

This is very very good. I made as is with the exception of the pine nuts. The garbonzo beans were still firm, so there's the crunch I needed. The flavors are very good. I hope to make this again.

Whole Wheat Pancakes

I rarely give anything 5 stars, but I have to say this was delicious. I followed the recipe exactly, which is rare. I even had unsalted butter! I ate 3 of them, which is even more rare. They were so thick going on my griddle, I thought I must've done something wrong, but I pushed them down a bit and they were so light and fluffy, probably 3/4" thick! Yummy in my tummy!

Buttercream Frosting

wonderful consistency. i did sift the sugar first. it is really really sweet, but eating with a cupcake seems to make it perfect. halved the recipe. 6 drops of red food coloring & 2 drops of blue made the perfect pink for a little princess's birthday!

Basic Chicken Stock

This was fantastic! I didn't clarify it. I stuck it in the fridge and after the fat got hard I picked it off and tossed it. I didn't need it to be clear. The flavor was outstanding! I didn't know it could be so easy to make stock/broth. I may never use store bought again!!!

Easy and Good Honey Mustard Salad Dressing

We loved this. I didnt measure anything, but used a spicy brown mustard container that was on its way to being empty. Added olive oil, lemon juice and honey. Shook it up until it all blended and we loved it. Thanks for the idea!

Flounder Zucchini Bundles

I'm giving this 4 stars, but mine turned out deserving of only 3 stars. We really loved the flavor of this. I think that a couple of my pieces of fish were too fatty because they all but turned into mush. The ones that stayed together were perfect. I'm pretty sure it was a problem with the fish itself, but I'm not sure. Either way it was a fun recipe and i'm glad I cooked it. Thanks for sharing.
