Cauliflower Fritters

I followed this recipe to the letter except I used left over cauliflower. My husband and I enjoyed this but probably won't make again. It had too many ingredients and was just OK. It was very flavorful, but the doughy part of it was strange. ALl in all, I give it a 4 because I love new and different.

Easy and Quick Swiss Steak

Yummy! I served this over white rice and it tasted just like stuffed peppers in a bowl! I changed a couple of things...I used diced tomatoes with chili peppers in it, the Rotel kind. I didn't have the right spices either...but it tasted great!!!

Farmer's Casserole

I took other's advice and added 1 extra egg. Also, instead of green onions, I added 1 can of diced green chiles. This was really good. It did need a little bit extra to cook, but it was delicious! My husband said he thought it needed more cheese, but in my opinion, everything could use more cheese!!!

Mexican-Style Goulash

This was YUMMY! As others suggested, I used 1 can of corn with the liquid and then did not add additional water. Also added 1t cumin. Will certainly make again!

Rump Roast Au Jus

I'm pregnant and haven't been able to stomach any kind of meat whatsoever. I LOVED this roast! I didn't use the cayenne pepper, and mis-read and used only a teaspoon of black pepper. Also, instead of water, I used some homemade chicken stock I made yesterday. This was fantastic. Perfectly seasoned and perfectly cooked. My husband and I really enjoyed this!

Chicken Pot Pie IX

My husband loved this the day after even better! I found it a little bland, but I didn't have celery seed and used celery salt instead. That was probably a mistake on my part. The chicken stock I used was home-made and needed salt anyway, but it needed some sort of umph. My husband disagreed and thought it was perfect. I loved the fact that it didn't have any cream of ... soup mix in it because I am staying away from MSG. Otherwise, the consistancy was perfect and I will use this as a base for my next pot pie!

Basic Chicken Stock

This was fantastic! I didn't clarify it. I stuck it in the fridge and after the fat got hard I picked it off and tossed it. I didn't need it to be clear. The flavor was outstanding! I didn't know it could be so easy to make stock/broth. I may never use store bought again!!!

Cheesy Carrots

Here's the thing with this recipe: I wanted to follow it exact, I usually do when making it for the first time. The problem was that I was out of sharp cheddar cheese, which could have been a problem, but Costco just talked me into buying some horseradish cheddar. Since I saw a few other recipes for carrots that had horseradish I thought, hey it's worth a shot. And guess what, this turned out delicious!!! Chock one up to Costco for making me buy some weird ol' cheese!

Sweet Potato Chicken Casserole

I made this recipe, but modified it quite a bit. I didn't want a stew, so I only used 3/4 a cup of chicken broth and about 1T of wine. I used a splash of milk at the end to make it a little more wet. Also, my chicken was already cooked so I only cooked for about 30 mins. I didn't use carrots as someone else suggested and the herbs I used were fresh sage (because I had some) and some dried parsely. I like it, but it wasn't much like the original. Oh, also I used some stuffing mix/bread crumbs for topping. Tasty stuff!

Thousand Island Dressing II

Perfect! Just what I needed! Nice and thick. I used lowfat mayo just to save on calories. I put it in an old Thousand Island dressing bottle, and no one can tell the difference!

Owen's Mozzarella and Tomato Salad

This was just what I was looking for. I would have added balsamic, but hubby doesn't care for it. Also, I had fresh basil and cut it a little too large. So make sure that you use fresh mozz. cheese. Next time, I'll add a little salt as the fresh cheese is missing it.

My Crab Cakes

I mostly followed this recipe. I forgot and mixed in the bread crumbs, but I had some seasoned stuffing mix that I crushed and added to the outside before frying. It was scrum-deli-icious!!! 11/17/08 - Just made this again and again I mostly followed the recipe. Still 5 stars!

Roasted Beets and Sauteed Beet Greens

I've never rated anything a 5 on this site before, but this was delicious! My husband cooked this for me after I dug up some beets from my garden. I had already cooked the beets and he sauteed the greens and the other stuff to add to it. It was perfect. He didn't like it, but it wasn't the recipe. I guess he just doesn't like beets!

Makeover Zucchini Apple Bread

As it turns out, I'm a moron. I put 4 cups of shredded zucchini in this bread and baked it in 12 large muffin tins. Don't ask me...I have no idea. Even with that, they were delicious. A complete meal!!! Next time I'll pay attention. I promise.

MMMMmmmm, tasty. I didn't have onions or mushrooms, so it really was just toasted almonds in butter with frozen peas. I added basil, salt & pepper. It was good enough for us!

Very very good! I prepared as is with one exception. Accidentally used onion salt instead of onion powder. Oops. A little salty, but my bad. Also halved the recipe. Will use again.
