Spiced Quinoa

Reviewed: Feb. 21, 2011
This is very very good. I made as is with the exception of the pine nuts. The garbonzo beans were still firm, so there's the crunch I needed. The flavors are very good. I hope to make this again.

Whole Wheat Pancakes

Reviewed: Feb. 19, 2011
I rarely give anything 5 stars, but I have to say this was delicious. I followed the recipe exactly, which is rare. I even had unsalted butter! I ate 3 of them, which is even more rare. They were so thick going on my griddle, I thought I must've done something wrong, but I pushed them down a bit and they were so light and fluffy, probably 3/4" thick! Yummy in my tummy!

Buttercream Frosting

Reviewed: Dec. 1, 2010
wonderful consistency. i did sift the sugar first. it is really really sweet, but eating with a cupcake seems to make it perfect. halved the recipe. 6 drops of red food coloring & 2 drops of blue made the perfect pink for a little princess's birthday!

Joyce's Granola

Reviewed: Jul. 29, 2010
Mine was turning out more like muesli cereal than granola, so I doubled the liquid amount. When it cooked up it was perfect. I added to fat free yogurt in the AM. Nice flavor! I used pecans and walnuts and would have preferred the extra crunchiness of the almonds as the recipe suggests to use. Nice variation on a usually full of fat recipe. Thanks for sharing!

Turkey Garbanzo Bean and Kale Soup with Pasta

Reviewed: Jul. 13, 2010
I really liked the ingredients. Followed the best I could with what I had on hand. Used homemade chicken broth which changed the flavor quite a bit. Next time I think I'd prefer white beans instead of the garbanzo. The kind I used had a really rough unappealing texture.

Berry Smoothie

Reviewed: Jul. 5, 2010
I really liked this smoothie. My berries were not very sweet, so I added 1 T honey, which wasn't enough so I added some splenda too. My berries were frozen in individual bags (from a friends farm) so they were plenty juicy which was perfect! So yummy and healthy and fat free, too!

BBQ Sauce

Reviewed: Jun. 21, 2010
This was tasty! I was in a pinch and didn't have adequate time to simmer, so I threw some cornstarch in it and tossed it over the pulled pork for some instant yummyness!

Fantastic. Made a couple of changes based on what I had on hand, but nothing that would have changed the outcome. Fantastic, really fantastic.

Southwestern Turkey Casserole

Reviewed: Feb. 12, 2010
We really enjoyed this casserole. I made a change based on other reviews and also what I had on hand. As the sauce, I used 1 can cream of chicken, 1 can enchilada sauce and 1 c sour cream I added a shake or two of cumin & chili powder. I layered as follows: * a tiny bit of sauce to prevent sticking * a layer of tortillas * a layer of southwestern veggies, from the freezer, rinsed to thaw * a layer of torillas * a smearing of sauce * the leftover turkey, cut into chunks * a layer of tortillas * topped it all with shredded cheddar and a little more chili powder for color This worked for us!

Campbell's Kitchen Easy Turkey Pot Pie

Reviewed: Feb. 11, 2010
I made a variation of this last night for dinner. I used fresh veggies that I steamed for a few minutes first. Added a shake of italian seasoning for extra flavor. Also, didn't have any bisquick, so used a package of pre-made biscuits and topped the potpie and baked until the biscuits were done. One additional mention is that I added a 1/2 can of milk to the mixture so it wasn't so thick, but it baked up beautifully. (Side note: I had to go somewhere before it was done in the oven, my husband and 2 year old ate 2/3 of it and then my hubby took leftovers for lunch. He didn't let me have ANY of it!)

Sweet Potato Casserole I

Reviewed: Nov. 27, 2009
EVERYONE loved this one! I made a few changes to suite my families needs: instead of 1 cup sugar, I used 1/2 c splenda, I replaced the mile with evaporated milk, for the topping I used walnuts instead of pecans, and I used 1/2 c brown sugar splenda blend. One other change was that I didn't cook the sweet potatoes first as when mine came out of the can they were really mushy enough to use right away. Oh, I also added 3/4 t nutmeg & 3/4 t allspice as suggested by another poster. All in all, this dish was gobbled up by everyone! I will use this again!

Southern Peach Cobbler

Reviewed: Oct. 12, 2009
this is by far my favorite recipe. I've used it several times. Since I live in CA I either use fresh peaches, or frozen from my moms tree. This is so easy and it's delicious. One note though, I haven't figured out how to store it if we don't eat it all. The crust gets mushy, but I don't usually have that problem!!! I wanted to add that I made this for a friend's son that is allergic to milk, so I made a really small portion and used soy. It made no difference. It was still delicious and he gobbled it up, enjoying his own personal dessert.

Big Cheeseburger Pizza

Reviewed: Oct. 12, 2009
This was fun. I was too scared to try the thousand island dressing as the tomato sauce. I just couldn't bring myself to do it. I just used standard tomato sauce. The hubby really liked it but kept wanting me to hand him a piece without lettuce! LOL

Marinade for Chicken

Reviewed: Sep. 2, 2009
This was fantastic. I made only one change to the recipe and it was by mistake. I used lime juice instead of lemon juice. Grabbed the wrong bottle. It added a deeper layer of flavor. I will make this mistake again! Also used dried parsley, as it was all I had on hand. I used on chicken thighs (with drumsticks attached) and let them soak all day while I was at work. Threw them one the BBQ and then devoured them when they were ready. I halved the recipe, but probably could have quartered it. It makes a TON. Thank you for the submission.

Carne Asada Marinade

This was really good. I took the advice of others and added a few spices. I had my hubby bbq and we made yummy burritos. Thanks for sharing. I had no idea delicious marinades were that easy. I won't buy any at the store ever again!

Potato, Broccoli and Cheese Soup

Reviewed: Nov. 17, 2008
This was really good. I had some leftover broccoli that I had to use. (It was parboiled and frozen, then thawed.) I didn't ave any onion so when I salted it, I used onion salt. I also used that better than boullion soup base, which worked great because it already has seasoning. Also, I didn't really measure and my soup was too thin, so I added 1 T of instant potatoes. All in all very good!
